I am making this next. I made the chicken zinger sandwich on Saturday. It was great! Perfect! ONLY change I would make is not to add salt to the batter it made it too salty for me and I followed your recipe to the T. I really just look at your recipes and make them. What is mixed spice? Where can I buy it?

Fly Freely mixed spice is a blend of cinnamon, nutmeg, cloves and sometimes salt. It's available in most grocery stores on the spice racks. If you don't see mixed spice look for all spice it's the same thing just don't have any salt in it.

Your fritters have a nice taste but the frying was the problem. Not too hot but not too low medium heat. I have a feeling that the baking powder caused the fritters to absorb a lot of oil. I saw much more oil on the paper towel than I usually do. I do not use a lot of oil. I also used a paper towel even on the top of them. I used a cast iron frying pan. I am going to use my electric frying pan and see what happens.
