This is a great recipe to make when you've got leftover bananas that have passed their prime eating days but are perfect for baking. The prep and clean up is easy, the batter comes together in one bowl and you don't have to get your mixer out. These are perfect served warm with a dash of butter, a great lunchbox treat and freeze really well. I usually freeze them so that I can have them as a mid-morning workday snack.
Recipe:
1 cup Mashed Banana (about 2 large bananas)
1/3 cup Melted Butter or Vegetable Oil
1 tsp. Baking Soda
1.5 cups Plain Flour or Gluten Free Plain Flour
Pinch Salt
3/4 cup Sugar
2 Large Eggs
1 tsp. Vanilla Essence
1/4 cup Mini Chocolate Chips *optional
1. Preheat oven to 180C (160C fan-forced)
2. Spray a 12 cup Muffin Tin with Spray oil
3. Add Bananas and baking soda to a bowl, mix and then add butter/oil, sugar, salt, eggs & vanilla
4. Add Flour and mix until just combined, add chocolate chips if using. Don't over mix.
5. Divide muffin batter evenly between 12 muffin tin cups
6. Bake for approximately 20 minutes or until a skewer inserted in the centre comes out clean.
7. Cool & Enjoy!
