To Make Sugar Syrup
Water - 1 Cup
Sugar - 3 Tbsp
Cumin Powder - 1/2 Tsp
Black Salt - 1/2 Tsp
Kashmiri Chilli Powder - 1/2 Tsp
To Make Banarasi Tomatar Chaat
Ghee - 2 Tbsp
Cumin Seeds - 1 Tsp
Poppy Seeds - 1 Tsp
Cashew Nuts - 2 Tbsp
Ginger
Green Chilli - 4 Nos
Turmeric Powder - 1/4 Tsp
Coriander Leaves - 1 Tsp
Salt - 1 Tsp
Kashmiri Chilli Powder - 1 Tsp
Cumin Powder - 1 Tsp
Tomato - 6 Nos
Potato - 1 No.
Water - 1/4 Tsp
Garam Masala - 1/2 Tsp
Amchur Powder - 1 Tsp
Chaat Masala - 1 1/2 Tsp
Coriander Leaves
Juice Of 1/2 Lemon
METHOD
FOR THE TAMATAR BASE
1. Pour ghee in a kadai and heat it.
2. Add cumin seeds, chopped ginger, green chillies and saute for a few seconds.
3. Then add poppy seeds and cashewnut bits. Mix well. Saute for a minute.
4. Add salt, red chilli powder, cumin powder, coriander powder and mix well.
5. Add fully ripe chopped tomatoes and mix well.
6. Pour water and cook the tomatoes until they soften.
7. Once the tomatoes soften, add the cooked potatoes after slightly mashing them.
8. Then add garam masala powder, chaat masala powder and mix well.
9. Cover the pan kadai with a lid and cook for 5 minutes.
10. Lastly add lemon juice, chopped coriander leaves and mix well.
11. Keep the tamatar base aside.
FOR THE SUGAR SYRUP
1. Take water and sugar in a saucepan.
2. Boil until the sugar dissolves fully.
3. Once the sugar dissolves, add cumin powder, red chilli powder and black salt.
4. Mix well and boil everything together for a few seconds.
FOR ASSEMBLING THE CHAAT
1. Take the serving plate and spread the tamatar base on it.
2. Pour the prepared sugar syrup on the tamatar base evenly.
3. Garnish with finely chopped onions, namkeen of your choice and finely chopped fresh coriander leaves.
4. Banarasi Tamatar Chaat is ready to be served hot and nice.
