We have special yams (water yam), veggies, legumes and other staple foods for diabetics. We generally don't count calories in Nigeria but because we cook everything from scratch with fresh ingredients (no preprocessed foods or artificially preserved ingredients), we manage to stay in healthy shape :)

Thank you! :) No, you don't need to boil it like the one extracted from scratch because the tinned one has passed through the boiling process. That's why I said to add it to the pot of cooked meat + fish then add water to get to your consistency and once that one boils well, carry out No 2 in the list. If you visit my website, the steps may be clearer there because I usually write out the list of the things you need to do even before cooking the soup. :)

Hi dear :) I guess we don't have it in Nigeria because everywhere you go, it's wheat flour but you can check it in these foreign shops like Shoprite, they may have it. I think spelt flour can be used for all recipes you prepare with wheat flour, the only thing is that you should not knead it for too long because it breaks down easily. :)

It is difficult dear but still, you guys in the States (especially those in the majoy cities) are lucky cos you can buy almost everything there. Where I live, nada, absolutely nada as far as the core Nigerian food ingredients go that's why I import almost everything from Naija. And yea, it is as yummy as it looks :D So get cooking already :))) You can skip the ogiri okpei, use stock cubes + more crayfish instead :)

Use only maggi or knorr (beef flavour). The ogiri okpei is the traditional version of stock cubes :)))

If your Nigerian grocery store sells Scent leaves, I guess that's what they'll know it as. If they are Igbos, they will also know it as Nchanwu. For the banga, I wonder if they will have fresh palm fruits lol. Ask for Palm Fruit Concentrate, the one that comes in tins or tell them the one used in cooking banga soup (ofe akwu) so they'll know you are not asking for palm oil.

Yes, for most Nigerian soups, you can use chicken, beef, fish or turkey. But for the very traditional ones such as Bitterleaf and Ora Soup, you should only use beef, dry fish and stockfish. No chicken or turkey in those. For pepper, yes ground dry pepper or fresh pepper can be used. If you watch a few of my videos, you'll see me using ground dry pepper too.

For dry fish, my favourite dry cat fish the one were the tail is tied to the head to form a circular shape. Then original mangala is my second choice. Some people swear by mangala but I find the dry cat fish tastier.

Question: In your description about using the tinned palm fruit concentrate, are we to boil it separately like how you did in the video before adding to the beef and fish? Or you cook the meat/fish first, then add the concentrate directly to meat/fish pot, then boil? I was a little confused about that. I really want to make banga soup. BTW this looks yummy!!

I didn't use the tinned palm fruit concentrate. I extracted this from palm fruits. But it doesn't matter the quantity, just put it in the pot and add water to bring it to the consistency you like.

For those from South Eastern Nigeria, boiled white rice is the best partner to Banga Stew (Ofe Akwu). For those from Niger Delta, it is Starch which is a fufu recipe made from cassava starch. :) Thank you!

No, regular Palm oil and Palm FRUIT Concentrate are not the same. Ask your African food sellers for Palm Fruit Concentrate and they will give it to you.

kelvinator AK There are 2 ogiris: Ogiri Okpei and Ogiri Igbo. Ogiri Okpei and Iru are the same. Ogiri Igbo is a paste used in Bitterleaf and Ora Soups. While I MAY add ogiri okpei (iru) to Okra Soup, I would not add Ogiri Igbo to it.
