Sensoring abilities dont work like Ultra Instinct , they are used for detecting individuals or seeing through genjutsu, require stability and a non combat type of situation or something close to it. They certainly can't be used for straight up "dodging attacks", otherwise Ino would be Goku. Also btw, like all the other techniques, they require handseals. Did you see him use some? This was just pure reflex speed seen as they were all looking at Gaara's hands.

Sage mode is a completely different beast than regular sensoring abilities though, it involves mastering the usage of Nature energy in all of its aspects, including sensing. Three things that bothered me 1. All these 3 Kages are the strongest in their villages, so, Kishimoto should have put the 3rd Kazekage here inatead of Rasa. 2.
