I understand what Jon means about the BBQ being made at home. It's just the way he said it and the video clip of the smoker being used makes it seem like he's calling the smoker that can also be used at a restaurant, a residential kitchen. I guess to the regular person or cook, it doesn't seem wrong to do this. It's just that an inspector doesn't inspect homes. They inspect the restaurants and bars. He might be doing everything at the smoker, but he probably stores everything inside of his home. Which is a place that inspectors don't check of course.

@@lukerosales5879 I don't blame him. He had nowhere at the place to keep it. That's why Jon thought that it would help to have an electric one just for the fact that it can be locked up inside and still be on and cooking. A smoker is for outdoor cooking of course.

Brisket is simple, mustard base, SPG to keep it simple, trim excess fat (cap should be no more than 1/4) trim eye out, smoke fat cap up and the cap renders into the meat 🍖. 275° temp let smoke 5 hours. If cooking longer bring temp down 180°-190° overnight. Simple technique is for easy and satisfied customers.

The BBQ to go container one would get me not ordering from the bar depending on the price. I could go next door and get more food already to go at the place that is making the BBQ. I'm a lady and I don't mind a to go container. If the food is the same size in the container as it would be on a plate and it doesn't have lack of quality, then I'd prefer the to go container. It's already for when I can't finish the food and will be taking it home. Though it might be a better idea for the bar to get smaller portions to get people to order directly from the BBQ place if someone wants a bigger portion.

A thing that the show and shows like this in general get bothered by cooks and chiefs not changing out their gloves after touching raw meat, money, and unclean stuff like a dirty surface. How come they never complain about them touching order printout? They've gotta touch it to hang them up. Though I never see any person change their gloves after that. These shows are being so nit picky about what they touch with gloves and then not changing them. They never say anything about touching the order printout with the gloves and not changing them and going back to cooking the food. That would be way too many gloves thrown out just from touching those papers. There are other things these shows say that if someone touches it, then the gloves need to be changed out and they're changing out their gloves a lot. It's just as minute of a thing as touching the paper, but they for some reason want the gloves changed out.

For the meat part it’s the fear of salmonella and other food related diseases. Dirty work surface is filled with bacteria. Money is because it comes from other people. For the tickets most times they have a ticket printer in the back that has been cleaned.

Gloves can have a negative impact on cooks/chefs because it gets them out of the habit of cleaning their hands as there's a kind of assumption that if you wear gloves it's fine. If they never wear gloves then they are much more likely to keep up hand cleaning habits as they should be cleaning their hands constantly. If they were gloves they should be changing them constantly as cross contamination is so easy
