I think this tale is a great one to understand forces in place during Baldur's Gate III

Ah, the creation story, and the likely "true" origin of the Dark Moon-Heresy; that Selûne and Shar in truth are one and the same, but simply manifestations of said deity's inner conflict on the matter of life-and-death. The majority of the myth is likely true, but not all of it can be, assuming that one believes the claims of Drasek Riven, the then Exarch of then dead Mask, during the events of "The Godborn." During the book, Riven explains parts of the nature of Mask as an entity, and what his cosmic plan is; That Mask exists as a herald for his "mother" Shar and grant her access to mortal worlds/realities and "devour" them. It is here made clear that this had happened several times throughout the ages, and that Mask had grown disapproving of it, and therefore setting up a scheme to ruin his "mother's" plans. If these claims are to be taken as fact (which I find hard not to, since Riven was gaining divine information from Mask during the time, so unless Mask was lying to "himself" it wouldn't make sense for him to be wrong), then that would mean that Shar wasn't created from the creation of the Faerûnian Universe "Crystal Sphere" but rather brought into it from somewhere else upon its creation; something already confirmed in the tale to be possible when Selûne brought The Sun (Amaunator/Lathander) into the universe from a different plane. An additional proof for this being true is Shar's state during the events of "The Godborn." In the book, Shar is attempting to enter the world and devour it, but cannot do so unless she is literally prophesied to do so by beings of the world. This in turn suggests that Shar is a goddess not capable of entering the universe of Toril "physically" (likely because her doing so would mean the immediate destruction of the universe), she is instead only capable of "bleeding" or "pushing" small amounts of her "Void-Power" into the world, while she waits for the time when she finally can appear in "whole" and turn the entirety of reality to void.

Dragons weren't around until after the Creator Races appeared? I know they migrated to Toril from some other place (some say Dragonlance) but I don't have any memory of when that was supposed to have happened, other than that it was more or less alongside Giant-kind.

The mess could theoretically be explain through comparing Chauntea to the Valar, Yavanna. In Tolkien's works, the "Giver of Fruits" mainly focused on the creation of plantlife for a time, only creating sentient life later on. Chauntea could be the same; though that does raise the question of where Silvanus and Mielikki fits into the picture....

question... i have to talk about faerun history in a couple of weeks in a storytelling class and i really need to know because i dont find it anywere else... after mystra was born, the part of the story when Shar meets the shedvari, this happened after or before the days of thunder? where can i read more about this?

If you're going to make videos about the Forgotten Realms at least do your homework and learn to pronounce names as Ed Greenwood intended. He spells out how to pronounce Selune in the original Forgotten Realms 'Old Grey Box'.
