Interesting. I rarely add water but I've had a few whiskies that were improved with a few drops. Probably did not add as much as in this video. Nice to see Weller Antique 107 come out on top.

What water did you use when proofing down? Tap water, filtered tap water, bottled water, fancy limestone filtered "mixing water"?

@@ADHDWhiskey that is most likely what's ruining the palate on ECBP and Stagg Jr. Try to use limestone water or a quality spring water as a last resort. I've done this before, to me it does make a difference.

how long did you let the whiskey blend or settle in with the water? do you think proofing it down and leaving it be for a while would change. ie, poor man's pappy is really good three weeks later after mixing it, when it's first blended, it is all over the place and not good.

You can, but i would say its better blended with a complimentary bourbon. I have played with this a lot this last year. ECBP with either wt101 or bowman single barrel hits the spot for me personally.

Instead of diluting heavier proofs. Why not mix in cask strength bourbons within the 105 - 110 proof range? Like Makers 46cs/private select, Old Scout single barrel, or barrel bourbon? Technically not "hitters" but, Stagg jr was a hitter until water was added. lol

You arent missing all that much imho. The 2020 makers full proof is just as good as weller 107 imho and is half the price. If you really want to get crazy, take makers full proof and add a splash of old forester 100 proof. I truly cant tell the difference between weller 107 and the above mix... And its obtainable.

@@enricojaun2880 In Ohio, Makers Barrel Proof (111.7) is $70 and Weller 107 is $50. They're both wheaters and the semblance stops there. IMO, of course. I also like them both!

Nah i say its fail not bcoz u chose weller 107 but bcoz 107 was there at the proof already as it is bottled and sold and was bottled at that strength probably months or year ago but other whiskey got less time to adjust with water as they were proofed down/diluted so if u proof down other whiskies down to 107 n compare it to weller 107 that would make a lot of different result . I personally would prefer ECBP , stagg jr at 107 better than weller 107 .

@@ADHDWhiskey usually couple of days as i have seen / heard distilleries describing they let the juice out of barrel diluted with water to rest for 24 to 48 hours in steel tank before bottling . But sorry that i do not have official source here but u can see some videos of smoke wagon where the master blender says he lets his blend with added water to rest day or two or 48 hrs+ before bottling where it usually mellows the juice / cuts harshness / also some smells etc . I don’t know much as i have less knowledge than you .

@@ADHDWhiskey and i also think that it makes a difference in taste when u water down a whisky before bottling where there are many barrels ( commonly 20-50 to hundreds of barrels) dumped down together so there is thousands of litres of whiskey and its watered down for desired proof which tastes different than the whisky u pour in ur glass and dilute it with water before drinking . i don’t know man , i’m amateur than u about whisky and sharing just my thoughts .
