It's because people are extremely attached to their habits. You have to prove that their habits DO NOT WORK. Even if by some miracle someone gets 1,000 people to spend $100 each at their bar on drinks and food, this exercise proves to the owners and employees that Whatever habits they have been using to get by DO NOT WORK and will lose them money. You have to really drive it home that whatever they are doing is leading to failure because people will always try to go back to their old habits. Think of how many people claimed to go on a diet but don't lose weight or gain weight. A lot of the time it's not the diet, its the bad habits of the people that are leading them to failure. Jon basically shows them that whatever the hell they thought a functional bar was, it was wrong and they need to radically change their habits, mentality and ethic to be on a road to success.

Mo's Place became a well known music venue as this bar appeals to the upper middle class demographic of Katy..
