Based on the video and the earlier comments, here is the recipe. Gluten Free Fried Fish For the batter • 1/2 cup gluten free all-purpose flour (1:1 blend) • 1/2 cup corn starch • 1 tsp onion powder • 1 tsp black pepper • 1 tsp garlic powder • 1 tsp salt • 1 tsp baking powder • Perrier water For the fish • Fish of choice - tilapia, cod, halibut, etc. • Sea salt • Black pepper • Additional gluten-free flour For frying • Cooking oil In a medium bowl, whisk together the dry ingredients for the batter. After blending the dry ingredients, add some Perrier water. Whisk until batter forms. Batter should flow easily from a spoon, slightly thicker than the consistency of heavy cream. If it's too thick, add an additional tablespoon water. Set aside. After making the batter, season both sides of the fish with sea salt and black pepper. Allow the fish to marinate for a few minutes. While allowing the fish to marinate, add cooking oil to frying pan and heat to medium. Lightly coat the fish on both sides with gluten free flour. Remove excess flour. Dip the fish in the prepared batter (on both sides) - allowing the excess batter to drip off. Carefully lower fish into hot oil. Cook until batter sets, about three minutes. Turn fish and cook until batter turns golden brown, about another three to five minutes. (Frying time varies depending in the size of the fish pieces.) Fry fish in batches, about two to three pieces at a time depending on the size of your skillet or frying pan. Drain fish on paper towel-lined plate. Serve at once or transfer to rimmed baking sheet and keep warm in preheated oven for up to twenty minutes.
