It's been over a year now, since i first baked a sourdough bread and ever since i have made a lot of them. I wanted to have a clear understanding of it before posted a video on this or conducted a workshop on it. Sorry for being so late with this video, I know you guys have been asking me to post this for a long time now.
Sourdough bread is the most amazing thing you can ever make. Period. Call it artisan bread or artisan sourdough bread , or just sourdough bread, it's heavenly.
This is the most basic sourdough bread recipe ! In this video you will learn how to make an easy sourdough bread without bread flour. This recipe is for beginners.
What is a sourdough bread?
Sourdough bread is made by the fermentation of dough using naturally occurring lactobacilli and yeast. The lactic acid produced by the lactobacilli gives it a more sour taste and improved keeping qualities.

Measurements -
For levain -
Active Sourdough starter - 50 g
Room temp water - 50 g
Any flour - 50 g
Autolyse -
All purpose flour or bread flour or maida - 375 g
Water - 250 g
For the bread
Levain - 130-150g
Autolyse Dough
salt - 10-12 g

Greatly detailed video. Really appreciate the hard work you put in to teach us. Please make more videos on scoring the sourdough. Also, it’ll be great if you display the name of various equipments you use, as you speak their names because we are unfamiliar with most of them. I am very new to baking and recently learnt to make focaccia. Can you make more videos on different types of sourdough and focaccia breads, please?

Hey thanks :) Yes it’s a little long process. Yes it can be made in otg, the rise will be a bit less but the bread will be great :)

Heyy! You can use any type of other circular basket or even a Kadhai , just cover it with a cloth and dust the cloth with rice flour before putting the bread dough on it. Instead of Dutch oven you can go for the regular baking tray and place the bread directly on it for baking but In that case cover the bread with an oven safe lid.

You have explained bread with sourdough starter so well.Recently I have switched on to sourdough bread.I would like to bake my first bread with my newly made starter.Shall I feed my starter soon after scooping out for my bread.I am suppose to keep it in the fridge or out side for rise.

Heyy! Convection microwave wouldn’t work well with sourdough bread :(

@@parthbajaj Thank you for the specific and fast response! That's why my sourdough comes out flat even after following the usual procedures, and even when baked using a cast iron dutch oven like setup for steam build-up. Please make an experimental video, if possible. Many can benefit from it, and KZbin literally has no content around it.

I stay in India n use Rajdhani maida for the recipe. My bread doesn't get ear. It gets flat as soon as i do scoring. I hv tried with different water percentage. Do you @parthbajaj think it is not a suitable flour??

Hey no! You can use the same amount of water for bread flour, as both of them are refined white flours. If you use whole wheat then you need more water

For sourdough bread it’s better to work with hands as you can feel the dough and understand everything! But technically stand mixer can also be used

Very well explained parth. Easy to understand. I've to wait for 3 days more for the starter to be ready. Since I don't have Dutch oven I'll be baking on the tray itself. Do I need to cover the dough? If yes how on tray?

Hellooo! Yess! Don’t start until the starter is ready :) Yes if you cover the dough with any oven safe, big enough container that will be great! Make sure to preheat that container and the baking tray for 1 hour at 250 Degrees C. Then flip the dough on your tray and spray some water on the dough, cover the dough with the container and bake for 20 minutes. Then remove the container, again spray with water, bake for another 20 minutes at 225 C. Hope this helps :)

Hello Parth .., I have tried to make this step by step with with precise measurements, and I used available bread flours,, But somehow the Dough is NOT able to maintain its strength especially after adding the levain... I used around 150gms as mentioned in the ingredients.. it stays very sticky.. and just falls apart.. I am NOT even able to do the slap and fold technique.. Just today I tried with a T 65 bread flour but was a disaster.. do I need to add in less of the Levain .. I live in Mumbai... Please if you could guide me...

Hi parth!! Thanks for this amazing video.. as a chef I learned how to make sourdough bread when I was working in abudhabi. And there we had access to Manitoba flour which was the perfect protein content for sourdough. But here in india I am getting confused as to which flour I can use to make sourdough. Is the normal store bought maida good enough for it? Or should I go for t55 flour as you mentioned in your previous video?

Hi. Thank you for your sourdough bread on KZbin. I have tried several sourdough recipes, mostly from people in the US and Europe. But your video set in India worked best for me. I got a dough that behaves closest to what it is supposed to - holding its shape, not sticking to the fingers etc. But I have a problem. I use a Convection oven with a max temperature of 200 degrees C. Is there something I could adjust? I baked in a covered deep braiser at 200 degrees C for 70mins and uncovered for 20 mins. I get a good crust but the inside remains underbaked. I am using multigrain atta. Would be grateful if you offer some words of advice. Thank you.

Heyyy yes! You can keep the starter for even 100 years or more, as long as you keep feeding it. If you go out of station or something keep it in the fridge to slow down the yeast activity but even in that case you have to feed it in 7-8 days max

A sourdough starter is a lifelong entity, people keep it for generations. In fact, the older the starter, the better. Just make sure to feed it everyday at least once :)

Use a little less water than mentioned maybe 1-2 tbsp less. while making the autolyse. It helps . Each flour absorbs water differently . That’s what I did after facing a similar situation

T65 , all purpose flour and whole wheat flour

Hi! Instead of puting bread to a fridge can I ferment it faster outside? How much time it'll take in India (end of September)?

Hiii :) Yes you can! Time will vary a lot! But just look for the right texture, the dough should look 1.5 times it’s original size! And it should look puffy

@@parthbajaj If I want to proof it overnight without fridge in environment temperature 35°C, how much levain should I put? Can I in this way make fermentation slower?

@@parthbajaj Thanks for replies! How much atta can I add to the recipe? And how much water should I add? I regularly make yeast bread with: 300g maida 200g atta 340g water What ratio of atta, maida, water and starter should I use for out of the fridge fermentation?
