Hey Friend!
Come along with me in the kitchen as we prepare for a day of batch cooking freezer meals for breakfast! These easy + delicious meals make mornings easy if you are short on time and need a quick meal to heat and go without sacrificing good food! These are healthier alternatives to what you can find at the grocery store! We are cooking up Quiche, baked oatmeal with a twist, 3 kinds of waffles, sheet pan pancakes, breakfast sandwiches, egg cups and homemade poptarts! I hope you enjoy this breakfast edition of Batch Cooking Freezer Meals :)

***Cool all recipes completely before freezing!
Quiche(1)
6-8 Eggs
1/2 cup milk
1/4 heavy cream
Salt and pepper
1-1.5 cup extras like meat, veggies, spices and cheese etc.
Grease pie plate, add your extras, mix your quiche base and pour over the extras into the pie plate. Bake at 350 for about 45-50 minutes or until the center is set and top is golden brown.
Once cool, cover with plastic wrap and then with foil. Freeze for up to 2 months.
To warm, let thaw overnight and bake at 350 for about 15 minutes or until center is warm.
Baked Oatmeal(1)
2 cups rolled oats
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 egg
1/4 honey
2 cups milk
2 tsp vanilla
2 cups of add ins, fruits, jams, nuts, raisins etc.
combine dry ingredients and place half in greased 8x8 pan. (can use bigger but will be thinner and bake faster) Next place your add ins on top and add the rest of the dry ingredients on top. Combine and pour your wet ingredients over top.
Bake at 350 for 35 minutes or until set and golden brown.
Cover with plastic wrap and foil and freeze for 2 months
To warm, thaw oatmeal overnight. Place in oven at 350 for 15 minutes or until center is warm.
Waffles

To make one batch
2 cups flour
1 tsp salt
1.5 tbsp baking powder
1 tbsp sugar
1 2/3 cup of milk
2 eggs
1/3 cup melted butter
1 tsp vanilla(omit if making savory waffles)
Keep plain or add in 1 cup of cheddar, 1/4 cup chives and 5 slices cooked and crumbled bacon.
Freeze prepared waffles in freezer bags for 2-3 months.
Banana Waffles

Sheet Pan Pancakes
Mix up 1 batch of pancakes using this mix here: • 7 Easy Homemade PANTRY...
1 batch
2.5 cups flour
2 tbsp baking powder
2 tbsp sugar
1 tsp salt
2 cups milk
2 eggs
2 tbsp melted butter
pour batter onto parchment lined cookie sheet, greased. Spread evenly and top with your choice of toppings.
Bake at 350 for 10-12 minutes
Freeze in Freezer bags for up to 3 months
Breakfast Sandwiches

Prepare eggs, cheese, meat and any other add ins you'd like. Assemble sandwiches and wrap in freezer paper. Place in freezer bag and freeze up to 3 months. Thaw overnight and reheat in oven at 350(8-10 min) or microwave(30 second intervals)
Egg cups(12)
Mix up 10 eggs, add a 1/4 cup of milk, pinch of salt and pepper. Grease a muffin tin well, add in 2 tater tots and sprinkle cheese on top, pour egg mixture over. Bake at 350 for 15-20 minutes until set and golden brown.
Freeze in freezer bag for 2 months. Thaw over night and warm in a 350 degree oven, or in microwave/toaster oven. You can put these in the oven frozen, it will just take longer to warm through. I keep checking every ten minutes or so.

I like to make veggie waffles…..shredded carrots, zucchini,corn or choice etc added to the batter then baked in the waffle iron makes a healthy meal. Served with some of your jam you want to use up by heating it and it’s tasty. I use veggie powders sometimes and that’s good in waffles…..try bacon jam then a fried egg on top and it’s heaven. I cleaned out my freezer from this and that’s to make room….dehydrating veggies and I found some chicken breast which hubby isn’t a fan of so I’m making a 12quart instant pot of chicken soup to can. I’ve been taking veggie scraps and making a thick soup which I purée and make a soup base with it. Good poured over noodles and add shredded cheese then bake till golden…. Trying to make veggie meals to test and keep as a alternative to meats each dinner. When my children were growing up Sunday late afternoon we had game time and I’d make ice cream sandwiches from chocolate waffles and homemade ice cream filling

I love making waffle pancakes, but now I’m making them with sourdough. They freeze beautifully and can be popped out for toasting for a quick meal.

Maybe making a few small holes in the tops of the pop tarts would help keep them from being so messy and oozing out the sides. It would let the steam out through the top! They looked so good that now I’m going to give it a try tomorrow lol! I’ll report back!

Ok so I made some this morning with strawberry jam and some with Nutella! I made the vent holes in the top with a fork and they worked perfectly! One or two had a teeny bit of oozing from the sides but not bad. Wish I could share pics in comments to show them off lol!

My mom always used mayo instead of the heavy cream. Very tasty that way but does take a bit more mixing to get the mayo mixed in but it was always on hand and cheaper than the heavy cream.

I might be wrong, but is quiche without a crust a frittata? Allergic to wheat so it is always what we make... Great place to use leftovers!

It’s very similar! Frittata is typically eggs with a small amount of high fat dairy like sour cream, heavy cream or creme fraiche, where quiche has higher amounts of dairy. The big difference is the crust like you said ☺️ It is for sure one of my favorite ways to use up leftovers 😁

I may have missed it, but what do you do with the sheet pan pancakes? Reheat in toaster? I’ve never seen them made this way and I like the idea. We have 5 kids and feeding them is a full time job 😂

Toaster, microwave, oven, whatever you choose! My kids even eat them right out of the fridge 😂 it sure is a full time job! I’m always trying to think if more ways to increase efficiency so I’m spending less time cooking and more time with them ❤️

Thank you! I thaw overnight, and warm in the oven at 350 for about 8 minutes! Not soggy at all! Make sure they are completely cool before putting them in bags and freezing!

Aw Linda THANK YOU! ☺️ I’m so glad that you all have been enjoying! I did indeed freeze it right in that glass dish. When reheating in glass make sure it is completely thawed and room temperature before putting in the oven to avoid temperature shock and glass breaking ☺️ blessings to you and yours! ❤️❤️❤️

Hi, with regards to the breakfast sandwiches, is the egg not rubbery when reheated? Love the bread video and this one. Thank you for the inspiration.

Hey there! Thank you, I’m glad you enjoyed them ☺️ I don’t find the eggs get rubbery at all, especially not in the oven. If heating in the microwave, make sure not to over do it, then you might get a rubbery texture ❤️

What does the freezer paper do? Why use it only on the sandwiches?

I like to use it because I can pull an individual sandwich out and let it thaw in the fridge already covered. Saran Wrap would do the same thing, but I ran out. The bag is really to just contain them ☺️
