You can end this fight way faster if you go to the administration building and save warden Joseph before going the industrial facility. You unlock the shock batarang which you can throw in the water so Grundy gets shocked and knocked out in one go

I believe I have it set to normal, although I know a faster way of doing it is the shock batarang but didn't know that till after the video
