Sly, have you ever played Condemned 2: Bloodshot? I suggest making a brutal kills compilation of that. Even today, the kill engine is fantastic, and there's a mode where you can test every weapon in the game against hostile NPC's that attack you. It's insane.

Sometimes a person won't die from the first hit, so he's not letting him go till he's really dead. The animations can fool you if you are under high pressure and only have seconds to devote to a target.
