As many of you already know if you follow me on instagram that I've been blessed with a little baby girl, and that is the main reason I've been away. Here are the recipes:
Apple filled biscuits (I found this on instagram)
Dough:
*200g butter (room temp)
*2 tbsp cornflour
*1/2 cup icing sugar (powdered sugar)
*2 tbsp yogurt
*1 tbsp vinegar apple or white (forgot to record in video)
*1/4 cup sunflower or vegetable oil
*1 egg
*1 tbsp baking powder
*1 tsp vanilla
*3.5 - 4 cups flour depending on dough
Apple filling:
*5 apples peeled and grated
*3 tbsp sugar (I used brown)
*1 tsp cinnamon
*(optional) 1/2 cup chopped walnuts
Bake in a preheated oven at 160C for 20 mins
Let them cool then sprinkle powdered sugar on top
Spinach fatayer:
Dough:
1 cup warm milk
1/2 cup warm water
2 heaped tbsp yogurt
1/4 cup oil
1 tbsp sugar
1 tsp salt
1 tsp baking powder
1 packet active dry yeast
3.5 - 4 cups flour (or as needed to form a soft dough)
Spinach filling:
Fresh chopped spinach
2 Sautéed chopped onions
3 tbsp sumac
1/4 cup olive oil
1/4 cup pomegranate sauce or to taste (or Juice of 1 lemon Alternative)
Salt , pepper to taste
I like adding a pinch of chilli flakes
Dissolve the sugar in the warm milk with the water and add the yeast, let it sit for 10 minutes until foamy.
Mix in the yogurt and oil, add in the flour 1 cup at a time with the salt and baking powder, keep adding 1/2 cup flour after the first 3 cups, knead until you get a very soft dough.
Place dough in an oiled bowl, let it rest until doubled in size (around 40 - 60mins)
I use this dough for all my fatayer recipes, so fill it with anything you like
