Watching this after catching Rick Stein testing Masterchef Aus contestants with fish.. 30 mins just fly by when you watch him talk about, prepare and cook fish! Really meditative :)

In the 70's I worked as a diver in the UK North Sea. We always kept an eye out for crabs and lobsters for the occasional dinner treat. One season I was crowned King Crab because of the numbers I caught. On one dive my score was 30+ after recovering some debris that spilled out crabs all over the deck. They were all cooked and either eaten onboard or dressed and frozen or their meat frozen in plastic pots. I took home a heap of frozen crabmeat at the end of that trip 😊

When making a mayonnaise add a bit of mustard. It not only adds flavor but it is an emulsifying agent, too. The egg yolks must be at room temperature.

Gods I remember dressing crab years ago as a work experience teen in my local fishmonger' shop.......learned so much in 2 weeks I can still recall the crabs turning up in seawater filled buckets, pincers bound and ready for the pot. Nothing fancy but picking the meat out took ages, loved every moment of it. I still like crab over lobster but not all the time, just now and again. And those crab timbales.....we pretty much inhaled them, delicious

I really like Rick Stein; have for ages but more time to focus on cooking these days... yay! Loved the seafood odessey in the garden making melange with fish and a bit of green dressing...! Rick it doesn’t matter about age; some things get way better with time. Keep going- have fun! Repeats in Oz are fine because I didn’t get to watch many of them before... 👍😊

Love Rick's program's. I enjoy the places he visits and people he meets.. BUT!! is it me but when he tastes the food it's in his mouth less than a second,and without chewing, he says " fantastic, beautiful texture" HOW? you dont chew it! You do it with everything. Please Rick explain why you do this. Now I can see it I cant stop seeing it and its starting to bug me and I dont want it to.

Hi Rick I remember a show with the mushroom growers Can’t remember if it was in Italy or France But there.was a Tongue, sweetbreads, and bulls penis Terrine with mushrooms, asparagus and something I want to prepare this terrine for my husband... hahahaha I’m I. Is his name pronounced as "Stine" or "Steen"? He was born in England, and not Germany, so why would his name be pronounced as "Stine"? Is this an English peculiar thing, as in Corbyn's pronunciation of Epstein as "Epstine", rather than "Epsteen"?

You never open the bottom of a crab with a knife you lightly push with both thumbs. (40 years as a seafood chef??) amateur!!! Over 30 years I’ve had a crab/lobster boat and I’ve never seen that before.
