Looks great. I make a similar burger. I put BBQ sauce on the burger after the flip, slide it in the salamander and top with swiss cheese. Great food unites us all.

Good technique on the onions. This burger has several names but I settled on the Western burger. It's the best recipe for a burger, better than a burger with fixings, burger and caramelized onion, or mushroom-swiss burger.

As a rule of thumb, don't try to deep fry with more than 1/3 of the volume of the pan with oil. If you find that the oil is too hot and in danger of boiling over, shut off the heat and add room temperature oil to bring down the temp. It's best to not risk a kitchen fire, especially since water will only make this type of fire spread by spattering flames everywhere.

I was watching one of your older videos (The BBQ pork burnt ends) and at 7:55 you talk about the meat looking dry and go on to mention that it is because the connective tissue hasn’t broken down yet. My question is for my inexperience... How do I know the difference? I made a brisket recently for the first time and thought that I over cooked the flat (point was perfect), but now I’m thinking that maybe it wasn’t done enough yet. Hope you’re able to help me out!
