Thor's hammer! Caveman lollipops! Beef hammer! Whatever you may call it Smoked beef shins are spectacular om the smoker! These are seasoned with chilli oil, Salt & pepper and dry mustard. Smoked for a few hours then covered with cut bone marrow and wrapped. Succulent, smokey, rendered bonemarrow. Just perfect!
Recipe
∙ 2 beef shanks ( about 1.5 kg each)
∙ Salt & pepper
∙ Homemade chilli oil (RECIPE • How to make HOT & spic... )
∙ 2 tablespoons dry mustard ( 1 tablespoon per shank)
∙ 1 cup BBQ sauce ( ½ cup per shank)
∙ Potatoes
∙ Canola oil
∙ 700g Bone marrow
