This couldn’t be an easier contest to enter in. Heck I subscribed to you guys after watching your first deer skinning video over 4 years ago and back then there was less than 3k subscribers. Since then I have gotten a Traeger and done most of the smoked meats you guys have shown me. Love love this channel.

I also found them many years ago looking for a good deer processing video. I've watched every video since and pretty much taught myself how to butcher and process all of my own meat since.... and my dad was a butcher for 50+ years lol.

Its been a little bit of over 1 year since i watched this video. I started with 1 pit boss vertical smoker, now i got 4 of them. I did it just for me and my family first for snacks. Then a colleague of me wanted some clean jerky since his an Carnivore. Words got out and now i cant meet the demand. I only got 3 different flavours, but still the Carnivore Label just salt bags goes like fire! My biggest order was for 3000$ from 1 customer, thats crazy! I had to put everything on hold to make that. I wanne say from the bottom of my heart, ty so much for this video! You guys gave me an business!

I made 12lbs of this with some left over deer from last year. I used the original seasoning and popped it into the dehydrator. 7 hours later I had a stack of treestand snacks! Great flavor and very easy to make, the whole family loves em. Venison Brats are next.

When I get my deer, everything that isn't cut into steaks, I grind with no fat and put into 5lb bags to freeze. Then I make jerky 10lb at a time just like your doing. Works great and very tender this way.

I make these all the time for the family. Awesome job showing off some good alternatives for seasoning. One thing I do differently is load the meat into my sausage stuffer then use it to load the jerky gun. This helps eliminate air bubbles while squeezing it onto the racks.

Do you consider your jerky shelf stable? Or do you keep it in the refrigerator?

@@Sandin374 Depending on the amount of smoke time and cure used. I have made some "shelf stable" versions for camping of my bike. These are pretty dry since they are smoked longer. Mostly I freeze them and replenish the fridge as needed.

I just got to visit the shop last week and stocked up on jerky, elk smokies, brats, a bucket of seasoning and some other things. Love it there. Hopefully I will get there again soon. The breakfast sausage was amazing

Guys, I enjoy your interaction and content. As an avid hunter Ive learned a lot about processing and have elevated my abilities through your content. This year is the year for snack sticks and ground meat jerky…I have too many deer and the freezer is full so…jerky it is!!

I make a lot of deer jerky. I use my sausage stuffer to fill the jerky gun tube. Works great for big batches. I normally do 50. #at a time. Try it

Love your videos guys , just a tip on ground jerky , invest on an electric jerky gun , bought mine last year and it cuts time down by 3/4 of what it would normally take you , other than that keep up the great work

I watched this a week or so ago and ordered some of your spices to make my own. I’ve been making my own jerky for years and came up with my own spice blend. I didn’t think it could get any better than what I came up with. I rewatched this video and followed your steps and made a batch this morning with your original blend, and it is the best batch of Jerky I ever made, thanks. Love what y’all do. I have thought about getting into butchery myself, my ancestors had a butcher shop called Tone Meat Market way back when horses were how you got around. It’s cool to see the old family photos of way back when. Would love to have a smoker ( just too expensive for my budget Lol) but anyway glad y’all are on KZbin and are giving helpful info. With the curing salt that they used, I'd probably say that this would be shelf stable for about two to three months. That's assuming that it's kept inside I temperature controlled environment.. AKA... Your house or pantry. I've made huge batches of jerky like this, and as long as it was inside the house, it kept for a good while. Refrigerator would probably be 6 months, and I even found a package of snack sticks that were 2 years old in the deep freezer, and they were still good.

For those with home use grinders or little smaller than this if you semi freeze your meat chunks before grinding it will grind better not hard frozen but like just stiff on the outer edges of meat also helps keep grinder head and auger cold along with what they mention as putting the grinder head assembled in freezer to while to chill it too

Enjoy all of your content. Grew up butchering our own deer and hogs with the neighbors. Have a question though. I use ground meat and mix spices and meat cure with my kitchen aid mixer to get a good protein extraction. The only thing I do different is I let the meat sit overnight in the fridge for spice and cure to saturate the meat. I load the jerky shooter the next day and dehydrate. Is the overnight rest an unnecessary step in making my jerky sticks? It turns out great every time. Enjoy watching you work your craft.

I have a question for you guys that I haven’t seen you do, can you show a country ham being d-boned and sliced? I haven’t done this in several years now but I wanted to see your procedure on it. I remember slicing them with the bone in and getting the bone to be a perfect circle in the middle.

You can put the meat in a stuffer and load your jerky canon that way... I've been doing it that way for years you just got to hold your Canon at a slight angle. But I also do 150 to 200 lb at a time

I would be amazed with any prizes but smoker is something I been eyeballing, I do have an offset but want to go pellet for ease. this giveaway reminds me that I need to order seasonings. Do think a dehydrater is my next appliance to buy. I do have some venison that I got last yr and being a disabled vet I was gifted some moose meat this looks like a good idea to use both hoping I can borrow a trackchair this yr and get a deer or 3 but not greedy. On my grinder I have gel packs that strap onto the head to help keep it cool when doin large grinds.

I have been trying to make jerky and have had some luck doing it this same way , but I am wondering , after you fine grind the meat you went straight to making the strips. I was told that it needs to sit for 24hrs to cure first. Is this not true ? Thanks

Hey guys! Love your channel and particularly loved this video! I hope to try out this recipe sometime soon as it looks very delicious (will need to use beef as I don't get to deer hunt anymore). Also, and most unfortunately, some of the equipment that you are using for home use such as the 1.5 HP grinder, the vacuum sealer, and the dehydrator (things that I would love to have and may someday have if Santa is good to me) combined are somewhere in the $1,500 to $2,000 range and since I do not process this type of recipe regularly it becomes difficult for me to justify spending that kind of $$. So, in my case I'll use what I do have and try to reproduce the jerky using my kitchen aide grinder attachment and my vertical smoker and hopefully end up with something similar. Do you have any other tips since I won't be using a dehydrator (although I am considering buying one)? This might be a stupid suggestion since you are marketing equipment, but I think it would be really cool if you guys made similar videos using or demonstrating (for comparison) the typical equipment you might find in peoples homes i.e. a small old fashion hand grinder, typical kitchen oven or smoker, cheapo vacuum sealer, etc.. Anyway, as I said, I love the channel and your very informative and well done videos. Keep up the great work!

I ordered the 5 seasoning package for a Cl holiday gift and it was thrown in a brown box all loose without the nice packaging displayed on the website. I also clicked on gift wrap. It wasn't. What a disappointment.
