Scott is in the driver's seat for the video today. It's a really busy day at Whitefeather Meats in Creston, Ohio but the guys found some time to get their lunch prepared. Starting with locally harvested, 100% grass fed beef, Scott will show you exactly how to get to a very special steak, how to trim it, and most importantly, how to prepare it!
Flat irons and tri tips keep getting more expensive and more popular, but this cut of steak is one of the least known of all steaks. Scott is going to start with a chuck, square it up, and get it cooked.
We're on the Traeger again today and the flavor of the day is Bearded Butcher Blend Black seasoning (bit.ly/3MRa9hA).
Today's Recipe:
✔️ Add some Bearded Butcher Blend Black seasoning to your cut of beef
✔️ Preheat the Traeger Grill to 170 degrees
✔️ Set the Traeger to super smoke mode
✔️ Let it cook to your desired internal temperature

2:12 - Seth squares up the chuck. The front and and brisket come off. Then the arm comes off, don't cut the flatiron. Last is the neck.
2:49 - Scott is going to cut the secret steak out of the squared beef chuck. Cut the cap off first.
4:12 - Here's the flat iron steak, top blade steak, and a mock tender underneath.
5:45 - Now, the beef shoulder blade needs to be lifted out of the chuck. Peel off the under blade steak. Cut along the top to get the chuck roll out.
7:25 - Here's the big reveal. When Scott gets to the rib, we get to the secret steak right on top of the beef ribs.
9:38 - Out to the Traeger grill to get lunch cooked up.

My wife and I made the two hour trip to visit White Feather over the weekend. I made the cardinal mistake went in hungry...LOL Scott and Seth were a class act. They took time out of shooting a video and came out front and answered all my rookie questions. They even indulged my wife and walked out front for a photo. Scott even recommended a local restaurant called Muddys that featured their Bison burgers. We loaded up on pork, beef and a couple of nice Wagyu ribeye's. Just wanted to say thanks for being so accommodating and Muddy's was great, my wife and I loved the Bison burger. Keep up the good work and God Bless.

I discovered y’all a few weeks ago and watched the episode where you broke down a side of beef. I had heard of a flat iron steak but thought that was a chain restaurant name. You were really bragging on them so I found and bought some. I’m a ribeye guy and had my doubts to your flat iron claims. You didn’t over sell it. 25% cheaper than a choice ribeye in Amarillo, Tx. Full over flavor and very tender. Served some to some pretty picky steak eaters tonight and they were totally impressed. Thank you 👍

Anyone who doesn't have a job I suggest maybe getting into your local meat department. I've been working with meat for 4 years and cutting for 2 now. I absolutely love getting into the cold cutting room in the AM and working hard! I have a blast plus it's a skill you'll always have! The money is good too and I've always had many promotions already (2nd meat cutting looking to be lead soon). Love your channel fellas and I'm always looking forward to the next one Also I'm a young guy, not many have this skill my age so it's a skill people will pay you for!

Wow I just found your channel .... I’m a x butcher in Western Australia and boy do you guys break down a forequarter differently to us but the same result.... smokers have been around here for about 10 years but are gaining popularity with the cheaper cuts . Would love to smell that rub and the finished cooked steak. Thanks .

In Scotland we would call that the Jacobs Ladder, normally we leave it on the bone and cut it into 3cm sections. slow roasted and served on the bone its gorgeous with a red wine glaze.

I would kiss you guys on the lips if you did a video about hand washing techniques when handling food. I work in a warehouse so it may not seem relevant on the surface, but anybody who deals with food (and I spent a decade in the food service industry) knows how important hand washing is to preventing the spread of disease. It doesn't matter what disease. It could be the flu, the common cold, e-coli, listeria, or whatever. As a bearded man myself, I'd love to have an example to show my 500+ workers on why hand washing is important. Keep up the great work guys, and as a fellow Buckeye, I hope to come up and see you guys soon!

Also called boneless short ribs, you won't find it in any retail stores because they leave it attached to the chuck roll for boneless chuck roast or the trim it off and turn it in to stew meat.

The store I work at used to get them in cryovacs (it was called chuck flap meat in the order book) before we switched to precut meat. They'd cut them into steaks and retail them as "chuck grillers" as if they were just making up names to confuse people. I dreaded getting anything they wanted to call boneless short ribs since it could be anything from brisket cut into chunks or flat irons scored to look like boneless country style pork ribs.

As a professional carpenter, a amateur welder who has built his own smokers and pits, and a decent cook, I appreciate seeing the works of craftsmen at their trade. My father was a butcher and cook. I have most all of his knives that he used. most are at least 70 years old. I use them daily. I try to buy the biggest cuts of meat I can find and break them down myself when I can find them. Living in the Middle East has it's challenges. However, by watching your videos, I can learn some different and better technique. Great video. Thank you. Do you ship products to the Middle East?

I freaking love this channel! Well done!! Thanks. I learned so much about cuts of all meats, where it comes from, how and especially how to communicate with my butcher. Thanks again I would have like to have been a Professional REAL Butcher like you guys are. REAL Butcher and not some supermarket 18 yr old assistant weeny grinding up hamburger and cleaning saw tables for $13.75/hr.... But I know you gotta start at bottom - yes. Love it!

Love the Denver cut! Unfortunately, we can't sell it for cheap. It sells great and our distributors have jacked prices. It's a beautiful cut that needs finesse (if you don't have a smoker). Low and slow work wonders.

Hey Scott and Seth! I love your videos. I run a landscaping business and work in my family's butcher shop during the winter. I've definitely used a ton of what I've learned from you guys to help my uncle. I do have a quick question. Any chance you could put a video out showing how to cut out the teres major(shoulder petite/petite tender)? Honestly, at this point, it's basically the only cut that I'm not quite sure where it is. In this video, I think it was part of the piece you pulled out called the under blade, but I'm not 100% on that. I appreciate your videos and hope you guys keep posting!

Here in Nebraska we usually buy beef in quarters. Can you do a video giving a list of all the prime cuts in each quarter. Sort of a cut list I can give my butcher to get the best steak options. Love your videos! Gotta find me some wagu!

In Australia we call the Flat Iron Steak the "Oyster Blade" and if you roast it whole all the gristle melts into delicious gravy - so when you trim all the silver and gristle - turn it into gravy - yumm

Boneless short ribs, my go to for taking home something quick and easy. Sliced thin, salt pepper, 1 minute on each side, amazing. Imagine a5 just with more beefy flavor

I did a pan sear on 2 denvers for dinner about an hour ago. Best steak in the cow for the dollar. Top 3 steak in the cow period. The other 2 are skirt and tri-tip. Yes, that means that denvers are better than a ribeye.

I must say guys the Black Seasoning was a hit with the wife! Got the Traeger 885 and smoked a brisket. Must say it was my best brisket ever. I’ll be ordering a bucket as soon as I try the Hollywood and Cajun to see how I like them. I’m from Louisiana so the Cajun better live up to its name. Lol
