Beautiful Birthday Brisket Recipe
Ingredients:
1 whole beef brisket (10-12 pounds)
1/4 cup olive oil
1/4 cup brown sugar
3 tablespoons paprika
2 tablespoons black pepper
2 tablespoons kosher salt
2 tablespoons garlic powder
1 tablespoon onion powder
1 tablespoon chili powder
1 teaspoon cayenne pepper
1/2 cup beef broth
1/4 cup apple cider vinegar
Method:
Preparation:
Trim any excess fat from the brisket, leaving about 1/4 inch of fat on the top.
In a small bowl, mix the brown sugar, paprika, black pepper, kosher salt, garlic powder, onion powder, chili powder, and cayenne pepper to make the rub.
Season the Brisket:
Rub the brisket with olive oil to help the seasoning stick.
Generously coat the brisket with the rub, making sure to cover all sides. Let the brisket sit at room temperature for 1 hour to absorb the flavors.
Prepare the Smoker:
Preheat your smoker to 225°F (107°C).
Add your choice of smoking wood (oak, hickory, or mesquite are great options).
Smoke the Brisket:
Place the brisket on the smoker, fat side up.
Smoke the brisket until it reaches an internal temperature of 165°F (74°C). This usually takes about 6-8 hours.
During the smoking process, spritz the brisket every 1-2 hours with a mixture of beef broth and apple cider vinegar to keep it moist.
Wrap the Brisket:
Once the brisket reaches 165°F, remove it from the smoker.
Wrap the brisket tightly in butcher paper or aluminum foil.
Return the wrapped brisket to the smoker and continue to cook until the internal temperature reaches 203°F (95°C). This can take an additional 3-5 hours.
Rest the Brisket:
Remove the brisket from the smoker and let it rest, still wrapped, in a cooler or an oven (turned off) for at least 1 hour. This allows the juices to redistribute and results in a more tender brisket.
Slice and Serve:
Unwrap the brisket and slice against the grain into 1/4 inch thick slices.
Serve with your favorite barbecue sides like coleslaw, baked beans, and cornbread.
