I was taught by a 89 year old man named Mr charley, my neighbor , he said the larger sweet potatoes has more strings in them , but the smaller to medium Sweet potatoes has little to no strings . Thank you Mr Charley for that & for all the rides to the grocery store , RIP Mr charley .

Another thing I do is make my own vanilla extract. I found that vanilla extract in the store is extremely high for a very small bottle. It’s so easy to do. All you need are vanilla beans and vodka. I take a large mason jar and add 10-12 Madagascar vanilla beans to the jar and add vodka to cover the vanilla beans (first split the beans so they are opened up). After eight weeks, the vanilla is ready to use. If you use several mason jars, you will always have vanilla extract on hand. While you’re using one jar, you have other jars waiting to be used. And the good thing is, the longer you have them sitting, the better the extract is. The main expense is the vanilla beans. They’re not cheap but if you buy in bulk, you’ll come out better. I use the Madagascar beans because, to me, they are plumper and make a better extract. I haven’t had to buy vanilla extract for several years now.

Great tip! I’ve been making my own vanilla extract exactly the same since the beginning of the Pandemic. I waited 6 months before using though. (Personal Preference) I still have beans in a rotating jar from 2020 & 2021. I also prepare at least two jars per year always in rotation. I’ve dried some of my vanilla beans and put them in a big jar of sugar and I use that for baking cookies and pound cake. It will definitely level up your baking flavors in all your baked goods. Try it, you will Never go back to buying vanilla extract again.

I use whole nutmeg and grate my own because store bought ground spices will lose strength and greatly affects your finished product! But its important to note the spice each cook uses should be to taste preference!

I love your tip whipping the carnation milk in with the eggs together in the measuring cup (or even in a separate mixing bowl). That is a great tip! I never seen an online video (not even by professional chefs) do that. I will be definitely doing that for myself when making sweet potato pies.

I love my mom's sweet potato pies also, haven't tasted anyone's like hers either 😋. On holidays , the people in the community, would come over for her pies, our family was of 12 people. Most of the pies 🥧I have tasted of people, always used too much nutmeg, which over powers a pie with too much, the same with stuffing, too much sage. Mom's was perfect 🥰💞

My Mother was from down South and she didn’t measure her ingredients either and she was a Great Cook! Everybody loved her food and she cooked a lot for the Church and other events for the Church and they really enjoyed her food. We, the Family miss her and her cooking!!! Looks so yummy. I like making my own pie crust. To keep the edges from turning dark or burning. I cut foil...turn it to make a curve and tuck it around the edges....works every time for a nice golden crispy crust.

Thank you... These ingredients and the methods are the same ones my mom used. You are the only one I have found to make sweet potato pies like mama. Even the pie crust... she did not use deep dish, probably because that's all our market carried. I am making pies this year with two changes...I want to use heavy cream instead of carnation and grate fresh nutmeg. I appreciated this video.

You make your pies almost exactly like I make mine, I do swap out the evaporated milk sometimes with heavy cream or half and half. My Mom was also a southern cook that didn’t measure and I don’t measure either. Love you guys 💞❤️💕

I just love cooking with you, and your husband is so funny. I love him showing up to his job on time to test taste 😂🤣 I think different States used different ingredients, maybe depending upon what was available at that time. My mom was from Georgia and they didn’t use vanilla in her sweet potato pies just spices like nutmeg, cinnamon and a little cloves. I love eating sweet potato pie, but the strings were always a problem for me so I slice, quarter and boil my potato's in water to eliminate the strings altogether. Baking sweet potato's is a great way to retain their original sweetness and flavor so I'll definitely be using this method going forward. Thanks!

If you have an Instant Pot or something similar (Instant Pot being a brand name), you can cook your sweet potatoes in that, so you don't have to worry about having excess water in the sweet potatoes by boiling them. They get placed on the trivet at the bottom of the pot, about an inch of water at the bottom, under the trivet, and then cook them. They're basically steamed.

Always string the potatoes after cooking them: Putting the blender on the potatoes after boiling or baking to pull out strings,then add ingredients
