Beautyberries and canning Beautyberry Jelly

Without the correct measurements of berries to water, is just a guess. Seems to me the very basic information of a tutorial are the correct measurements. Suggest the very detailed directions and measurements page included in the liquid Certo box will give excellent results.

Nice video. Wish you would have said how many berries to the water you used? Im assuming 2 quarts to two quarts?

We regret that we did not include those details on the original video. We are working on a revised/updated video now but have not posted it yet. This year we used the Currant Jelly recipe on the Sure-Jell packet. This called for 20 cups of berries (which seems like a huge amount of berries to us) and 1.5 cups water. This took 6-1/2 cups of juice(water and fruit juice combined), 7 cups sugar and 1 box of pectin. The jelly did not set. We redid the batch with a second box of pectin and it did not set. It tastes good but did not jell. We will re-do the recipe with 2 boxes of pectin and post a report on that process.

@@hideawayhomestead3477 oh I subscribed! Love yalls mannerisms etc lol glad y all are putting out content! 20 cups does seem like a huge amount. Every recipe I've found uses 6 cups ( 1.5 quarts) berries to 6 cups water.... Well... Least you got some syrup lol probably would be good to cook desserts too

You are supposed to bring the juice and pectin to a full rolling boil before you add the sugar. Prob didn’t set up.

Debbie, The recipe that we followed did not give specifics for the required amount of fruit to start with. I just checked the SureJell instruction sheet to see what they recommend for a similar fruit. It looks like the most similar fruit listed would be currants. Believe it or not, they suggest starting with 20 cups of fruit to end up with 9 cups of jelly. We plan to make more jelly this week. I will update the quantities and give a report.

I like the video but you never said how much juice you've used it would be nice if in the description you would put the recipe but that's just me critiquing it was a good video thank you for the information and taking the time to show me how to do it
