whoops! I meant to say the minimum size limit in the Puget Sound (where I live) is 6 1/4" not 6 3/4" as I inadvertently said on the video.

Hi Becky! Thanks so much for the updated video. Just wondering where you get the "14 minute" time frame for steaming. Are you following what seems to be the traditional 7-minute-per-pound cooking technique? Also, are you steaming with salt water?

Hi Hope -- yes, started with the traditional 7 minute per pound technique and it worked perfectly for the steamed crab. I did try steaming a whole bunch more crab at one time and found I had to add some extra minutes. Not positive of this but I think steaming doesn't conduct the heat as evenly as boiling, so that might explain it.

It is literally 12:26 am and I just got home an hour ago from a crabbing trip on the Oregon coast. Going to have me some steamed Dungies for lunch tomorrow. Crab is already split and on ice till then.

The method of chilling/holding/knocking that huge live Dungeness crab at the nerve point...And seeing it go utterly limp...was amazing. My 70-ish y/o Mom boggled when she saw your video. My Mom said "She should do a East Coast Maryland blue crab recipe next!" (I grew up in Maryland...And I think she just wants to see how you prepare blue crabs and then complain about it.)

This was an awesome video for what it is. I’ve hunted and fished since I was very young, and my dad always told me to “make the kill quick”, “be accurate with your shots” and so on. Basically don’t be a shit head if you’re going to take an animals life be appreciative of what you are taking and prevent suffering as much as possible. With that being said.... It always seemed weird that we just threw crabs in boiling water to kill them. Like respect all of nature son, except crabs, fuck those guys. Thats how my old man was taught and I’m sure how my grandfather was taught though. If they were still around I’d show them this, but at least I can pass it on to my daughters and sons. I really appreciate this video, and I learned something. Thank you.

When we're on the beach, Puget Sound area, just flip the crab over and smack that nerve center with a rock. The back or handle of a knife works too. Quick and easy. Pop that shell off, break in half, swish in the ocean and straight to a pot of boiling sea water. It's already salted :) Thank you for showing how easy it is to prepare crab. The other YT video's made way too much work of it.

Dear Becky, a crab has a ventral (nerve) cord you have to strike a second hit to the head cord in order to kill it.

that crab was very clean under the shell - I like the technique of twisting the legs off the body rather than lifting off the top shell and doing it that way. But that dispatch method - someone would have to do that for me.

I just finished preparing, cooking, and eating my first dungeness crab after watching this video, and must say... holy crap that was an experience. Definitely a bit freaky, but dang was it good. Oh, and I just went for it and made a sauce using the tomalley, crab water, butter, and lemon. That was pretty good too, even though it was hard to get my mind past the whole gross green substance I had just scooped out of it's recently deceased cavity thing. Thanks for the help!

Great video. Just picked up three of these bad boys from Pillar Point Harbour in Half Moon Bay. Going to try your method of killing them this time. Previously I would grab the legs and hit the top of their head against a corner surface which pops the top shell off quickly. I assumed that was a humane way of killing them as well. Excellent tips on how to remove the meat. I learned a lot from this video. Well done and thank you!

I wonder where you bought that fresh live crabs. I have gone to several markets but they only sell frozen or already-cooked crabs. I really need fresh live crabs for my recipe ( as you know, fresh crabs taste the best!). I hope you will answer my question as soon as possible. I live in California.

You don't mention where you are in Calif, but if you don't want to catch it yourself, you can always go to the nearest ocean marina that has fishing boats. Pillar Point in Half Moon Bay for example or any one close to your location. Be there in the early morning when the commercial crabbers come in. You can buy all the fresh crab you want directly from the boats. A might cheaper than the grocery store as well I might add.

We don't find a sharp area to knock the crab nerve, we just use 1 piece of chopstick.

Using a chopstick (or a knife) is a great technique. The reason I don't teach that, however, is that you have to put the crab on its back, peel up the apron and then strike that area precisely with a knife or chopstick. For many people a little squeamish about the process, the fact that the crab will often react strongly to the peeling back of the apron (reaching out quickly with its claws and legs) makes it intimidating (and if they are using a knife, dangerous)

Do u ever cook them whole to cook the "butter" and meat in one go? Also, as far as eating crab and the pollutants that are associated with them, no doubt eating dungeness in puget sound runs some risk. Especially some areas. However, perhaps coastal and areas of the strait of juan de fuca have significantly more clean crabs. :)

Don't feel bad about your old video Chef Becky. You didn't make crabs suffer more by throwing them into boiling water. They still die quickly from shock from boiling water.

If you're going to make a blanket statement that is only true in your specific state, then you should make that clear by making a point of where you are. You need to remember you're posting on KZbin which is not location specific. You note that it's illegal to capture female crabs which might be true in Wash or Ore. It is not true in Calif. We can catch and kill both male and female as long as they are of legal size.
