I'm a home brewer, and I think Campden Tablets are great to destroy the wild yeast. I don't get the tablets any more. I get the Porassium Metabisulfite powder Campden tablets are made from. I like the powder because I have more control. I have a spoon to measure the amount of a Campden tablet, but I can use a smaller amount of the powder if I need a pint or quart of solution to sanitize the car boy, or tools

I was really pleased with the process you used! I do mine pretty much the same way but I had always added water & I think that was my downfall!! Thanks for sharing! p.s. if you have a recipe for cantelope I would love it. I'm making it now but can't find not 1 recipe for it. so I'm doing it by experience.

Freeze the chunks for a few days then thaw, then use an apple cider press. Maybe $30 online. 3 cups of sugar should get it up to 11-14%. Let it ferment as bout 2 weeks at 68 degrees.

I really liked your video. However i never used campden tabltes( = sulfite ) in my wines to destroy any wild yeasts, since my added yeasts are by far stronger in power and concentration. One problem I still have though. Are you not afraid of having to much methanol in allowing pulp, may it be in small particles passing thru the screen, yeasting next to the sugar(added or natural present)?

@TimeforaChange InGovernment Hi you are doing fine in using lemon juice ( or a little citric acid) to break down the sugar into its base components( glucose and fructose), sure you knew this allready. For yeast I simply used the commercial dry yeasts( cheap ones in a little sachet ) , depending on what kind/type of wine I wanted ( which alcohol percentage and leftover sugar) I still like sweet wines. Regular bread yeast seems to be very hard as it produces only approx.5% alcohol(beer)(not of interest to you, but it gives some taste) and a host of other products with a smell and taste not every one agreeable I hope you `ll enjoy, because it`s your very own product!

Wow, that's high ABV!! I actually made s dandelion and orange mead this spring which came out 18% and my starting gravity was 1.127 but it went all the way down to 0.992. Not exactly what I was shooting for but the honey was super strong and I used champagne yeast. In the end, I like it. It's currently only 3 months old and it's already really good, the alcohol bite is all but gone despite the 18% ABV. After another 3 months, it'll be amazing

I'm confused, you add yeast twice? first a 1/2 tsp of what kind, & then a partial packet of champagne yeast per gallon? What exactly does the tablet do & is it optional?

The 1/2 tsp is yeast nutrient, the camden tablet kills the natural yeast in the melon, after 24 hours you add the champagne yeast to ferment the sugars in the juice creating alcohol.

How do you read that gravity meter? Where'd you learn all that? Trial and error?

They're not hard to read. There's a paper insert with the measurements on it. You take an initial reading before fermentation then take a second afterward. You simply look up "abv calculator" on Google and enter your first and last measurements where indicated. It will calculate your alcohol by volume. Most add campden tablets after fermentation to make sure all yeast is dead so when you add sugar for taste you don't end up with exploding bottles.

I know you have the ratio down… The recipe is of utmost importance… We were trying to make wine and it just came out so sugary, because the east kept activating in the heat ends looks like there was too much used in there so he needed more sugar, that was wrong… And made it so sugary and sweet like syrups… This is not as easy as it seems. But I totally dig that you’re using honey do you sweeten. We’ve learned a lot since we started and thank you for your tips and tutorials 💜

you can use clear garbage bags, just double bag it or triple bag it. the cool thing about it is you can see and hear the bubles through the bags and keep an eye on them for when they stop cooking alcohol.

Old Dogs and Children, and Watermelon Wine. I think Tom T. Hall made that wine up. I've made wine out of anything that has sugar in it. I finally gave up trying with watermelon because it spoils in the bucket before it gets to the end of fermentation. It tastes pretty good if you can get past the smell. I've had better luck with the rind and throwing away the red meat. Next time, I think I will try fermenting it in the refrigerator.

The secret to getting the watermelon taste isn't at all what you'd expect. For some bizarre reason root veg (specifically turnip and parsnip) produce a wine that tastes just like watermelon. Look up "Parsnip Wine Review And Taste Test!" by Happy Homestead. You're welcome!
