In the wake of the homemade YEAST, let's see how to use our yeasts to make wine. Today, in fact, we are preparing the WATERMELON WINE, a perfect project for the summer that is just around the corner.
The ingredients are very easy to find:
Watermelon 5 kg
Sugar 70 g
1 Lime or 1/2 Lemon
You 1 cup
Homemade yeast or 1 bunch of grapes

I made a bottle of blueberry wine with grape yeast and sugar no tea no lime. I did it after seeing the yeast video but before seeing the this video. I strained the pulp and bottled it, put the lid on and left it on the kitchen counter. It is two weeks now but still clearing and fizzing. I tasted some when I strained off the pulp. It is 'spectacular'. Cant wait to drink it. I dont have an alcohol tester but the sample I tasted was enough to tell me that its strong enough. Thanks so much for you videos they are a simple, uncomplicated, way to learn artisan food production. Sharing skills most people have lost. Please keep it up, Im a fan.

This was my first wine making experience and it turned out to be spectacular. Thanks for making it so simple with the baloon. Just a piece of advice for people who are saying that the wine is tasting bad, or smells off - Make sure thay you sanitise every single thing that comes in contact with the fruit and you should be fine. My wine came out a little cloudy, but it smells really nice. Sweet, fruity, almost flowery. The process was very rewarding and the timelines given in the video matched my timelines exactly. Hi Aurko - sounds like you had a great experience. Can you help me out a bit since i'm hoping to start this in the next few days. I understand that the primary fermentation phase took about 4 days. Did you transfer the wine to other bottles for secondary fermentation? If yes, then how long did secondary fermentation take? And while going into secondary fermentation, did you siphon off the wine without the sediment (yeast)? Finally - what do you think is the abv of this wine? Thanks in advance for your help.

@@arifabrar Hi Arif, my experience has been very rewarding thus far. This is the entire process that I had followed : I made some yeast with some grape juice which became quite active within 48-72 hours. I took around 6 kilograms of watermelon, chopped it up, crushed it by hand to extract the juices and boiled the juice and pulp over a low flame. I added 200 grams or one cup of brown sugar, as I estimated that the juice the fruit yielded was around 2 litres. Once the liquid cooled down, I filtered it out in the fermenter and added the lime tea and grape yeast. I placed the baloon on top and after 24 hours, the baloon had inflated quite a bit and I could hear the sizzling sound inside the fermenter. I made two pin holes and patiently waited over the next 36 hours. Once the baloon deflated, I could see traces of yeast residue floating on top so I used a cheese cloth to filter it out while bottling. The smell I was getting at this point of time was of sweet melons and fruits with hints of alcohol, so I was sure that I wasn't spoilt. I took this opportunity to taste a little bit of the product and it tasted quite nice. As it stands now, I have put two bottles of the wine in the freezer and will open the bottles after a week, hoping that the yeast will sediment at the bottom and the wine will become clearer, with more complex flavours. Hope this helps :)

@@arifabrar Absolutely. Even though I sanitised everything that came in contact with the fruit thoroughly with hot water and dish soap, boiling the juice and pulp ensures that there's another level of disinfection before it goes in the fermenter. I guess I was paranoid of bacteria spoiling my wine after reading so many comments about the possibility of that happening. Also, since I didn't have powdered sugar, dissolving the granulated brown sugar became really easy when the liquid was hot. Just make sure that the liquid gets down to room temperature before adding the yeast or you'll kill it. :)

I love watermelon prepared in a blender seeds and all for a nutty flavor and a touch of ginger root. Very refreshing summer drink. Could be well worth distilling. Maybe the extra flavors will carry over.

Thank you for your videos. Fruit and vegetables with lots of starch need a very long time to clear, my carrot wine took a year, racking it a few times. I will try watermelon and bananas! Blackberry wine is my favorite! It only needs some sugar. You can control how sweet you want your wine by stopping the fermentation with grain alcohol.

Pretty much similar, what I use to do here is I put the whole fruit pulp and mix it with more quantity of sugar and I also add water enough to match the quantity of sugar. I boil the mixture for 20 minutes to get rid of nasty bacteria that may possibly ruin it. Also I use to add some spices like cinnamon, ginger and star anise to get some extra flavor. The Match of fruit sugar and table sugar gives an ABV of around 10%. I clear the wine post fermentation with gelatine and it really clears well and during bottling, I carbonate too for that good sparkling. You may also try it. Thanks.

I boil all my fruit before making wine and it is always crystal clear in 7-9 days. Mango is perfect in season. Thailand John.

Hello Sir. This video of yours inspired me to start wine making when it was first posted. I have made a number of brews since. I would invite you to make a wine or beer from golden kiwi fruit (the yellow one)if you can find it. I did the taste in the beer stage is fantastic!!! Use very ripe fruit. It does not clear easy but tastewise its on top. Regards from South Africa...

cuoredicioccolato i have not . Just about to watch your banana video. I’m in the southern US , muscadine and scuppernong are our native grapes which we make (country wine), Reminiscent of moscato . I’ve made Dandelion, mulberry, blackberry, mead ,fig , Wild Cherry, pokeberry , peach ( primary fruit crop in my area ) . I could probably put up 50 gallons with what fruit is on my blackberries this year. Just slaughtered a bull , which is how I found your channel studying recipes of cuts I don’t normally use and about curing .

I made beetroot wine... Pretty strong after a week... Will let it ferment for another week before botelling.... Good red colour... Have added some lime juice and spices also to it..

Did u use the same yeast as shown here? Im planning to make beet wine with this yeast but sweet taste. How long do i need to ferment? Usually other videos say 15 to 21 days stirring daily. Can you please share your method. Thanks😍

Being in the subcontinent, here in South India mango season has started, I think it is the same in Pakistan, you should try that too definitely

Love that you make wine out of fruits, any fruit. And make it seem so easy. I will try to ferment an apple and then make apple wine!!!! I’ll let you know how it goes. I have mead right now that I will try in about a week to see if it came out good!

I made this and it came out beautifully! the wine is clear and fermentation is almost done! Thank you so much for this video! As for the storing in a separate bottle and cooling it in fridge, is it truly needed? is there some other way as i don't have access to fridge

Athar - is this after just the primary fermentation? How long did primary fermentation last? And has the yeast settled at the bottom? What sort of fermentation tank did you use? Sorry for all the questions, but hoping to start this in the next few days and looking to piggy-back off the experience of others who've already tried this :).

@@arifabrar No worries! i had so many questions as you but i just went with it. Yes, this is after the primary fermentation (by this i mean that adding all the wine ingredients and leaving it to ferment), it took 5 days to completely ferment, i made it with half water melon (4kg). For now the wine is clear and everything has settled down. As for the fermentation tank, i used a 2 1\2 litres cococola bottle with a balloon as a lid.

I love watching your videos and learning from you! Yesterday I made three yeast starters - red grape, green grape and mixed apples. Now I wait for the balloons to swell up! One question... can one mix the starters for different characteristics in beer? I want to make spectacular beer and wine... just like you!! 😁🥂🤣🍻😉

This wine takes a long time! I started a batch on 9 of july, 3 weeks ago (with raisin-yeast) but it still keeps bubbling. Did the watermelonwine first but 2 limes was too much. Will do one more when this is finished (anxious!)

I bet the old coat hanger on a drill method would really speed this up. You could pour the juice right out of the melon into a strainer/container.

I watched the video with the balloons......the shops are closed, so where do we get a balloon?.....no problem: We can all get surgical cloves....so on a large container use the whole glove and on a small container you cut off the fingers of the glove.....thanx for the balloon idea...it is brilliant!...now we take it further and use gloves....stay safe everyone and lots of love and blessings!

Thank you for your great video.I've seen the homemade yeast too and I really liked that because its abandoned in my country.but I have question for this wine,how you can get more clarity in it and have a clear watermelon wine?

what i have known from his videos and other homebrewers, they do several bottling removing residues and adding sugar 8g= 1L of the wine then cold crashing it in the fridge so that the yeast residue in the wine will stop fermenting when given sugar.
