Brilliant video,top notch set up from start to finish.I spent over 20 years butchering cattle. That double chamber vac pack is some machine.Thats how beef should be cut. 68% is some yield to return to the customer. Many thanks for taking the time to record and upload the video.

This is excellent! We raise our own steers and they are organic grass fed/grass finished. We love the taste of our meat not being so fatty. It is places like this that makes sure we actually get our beef. 💗💗💗💗💗

My parents always raised their own beef and often found pieces that weren't theirs in the returned beef after cut and wrap. When you have been doing it all your life, and your parents were butchers, you can tell. When you know you know. Thanks for being honest and conscientious about this.

Enjoyed your video, the last beef I'm almost certain I received someone else's beef and not mine. I fed mine out on good quality hay, a blend of cracked corn, cracked rice , all stock and rice brand. That steer was 750 and butterball fat. I watched the entire skinning and splitting of it. Watched them stamp it and roll into the freezer. What I got back was what appeared to be an old woods cow that was very lean . If I do another one I'll do it myself. I've butchered more deer and hogs than I can count and unless I find a processor that measures up to yours, I'll do it at home

Brilliant video, I live over the pond so can you explain please. People buy a whole live animal and take it to you and you butcher it for them. Sorry if it’s a stupid question but it’s a new concept to me

Looks great 😮 wish I could take home , but im in Canada 😢 and im 71 yrs. Of age .i worked with chickens for years in a place called Swiss Chalet in Abbotsford BC Canada and was # 1 chef for over 15 years. Now broke and barely making ends meet 😢, yes very sad 😢 , but ill survive somehow

I have a question! So idk about how the process works so why is the customer only receiving 68% of the weight from the carcass? Do you keep some of the beef for your business or is there a large loss of weight from cutting off bone? Why must the carcass hang for about 2 weeks before cutting? And are there any spices or salts or preservatives added to lengthen the shelf life? Best wishes!

What is your current cut/wrap price per pound on beef?

From their website, $89 kill fee, $12 disposal fee, .89 per lb (based on hanging weight). So a 1000 lb steer would cost around $625 based on their yield estimates.

I just bought a quarter of beef.. everything came vacuumed sealed except the hambuger..still done the old way..in the tube..I would rather had them vacuumed sealed to

About 30 years ago it was a small custom butcher at the corner of extension and Main Street in Mesa Arizona. Somebody brought in an animal , I think a bull , The animal was in a rage and somehow knocked the gate down and got out and ran down the highway where some guy in a pick up truck got out and tried to lasso the animal. I think this guy was a farmer if I remember but this Pissed off bull ended up charging him and he was killed. I read in the paper where his family sued the small butcher for negligence and I believe that was the end of that Small Butcher Shop because they have never reopened. They had a video and that animal was absolutely unstoppable as if he knew what was about to happen.

How do you kill the animal? Do you just shoot him in the head? And what happened to all the guts, I know some butcher shops sell some of the guts to the metsicans .
