I absolutely LOVE mushrooms, and use them in almost every single dish, when I'm cooking! I'm not sure where you get your mushrooms, but try and stay away from cheap grocery stores & go to places like Kroger or Central Market (or a good store in your city). If you get some and they are wet, but firm, then it's fine, but if they look wet and slimy- DON'T GET, they are bad. If they have some dirt on them, then get a colander and rinse them off with cool water, then pat them dry or sit out to dry.

I tried this recipe yesterday with two cheap, thin sliced NY strips from the supermarket. Obviously no where near as nice as tenderloin medallions but, it was still absolutely delicious.

That is the fun thing about food, you can try ingredients in your economy and it changes it, but it may suit you just fine. One recipe has so many options depending on seasonal items, supply, ability to budget it. One meal could vary from feeding 4 people for $20.00 or $ 200.00, the difference is freshness, and to varying degrees nutritional content. It is absurd to me that too many people have to plan deeply to survive but not thrive.

I'm going to culinary school next year, its my passion along with philosophy, science, and theology. I could care less about the money, but if your hear is in it you'll go far in this industry. You got the soul John, it shows in your videos, and I thank you for all the work you've done for us and your blog! Btw, the sauce looks sexy

I just want to say....that my wife wanted a dish with mushrooms... and I tried your beef rouladen recipe (delicious)...So, I looked through your videos, and found this..and let me tell you, aside from a little too much grapeseed oil in the beginning and.. my steaks being a little thicker.... this came out amazing. "Like seriously the best thing I've ever had" kind of good. Thank you for the awesome recipes and easy to follow videos. Keep up the good work. BTW I did it the only way and it was pink on the inside.

I made this with Pork and it was delicious! I didn’t have the suggested wine so I did the same measurements with White wine and then added a teaspoon of Brandy and also a teaspoon of sugar 👍👍 Delicious meal, I would make this again! Thankyou Chef John ☺️

This is a constantly debated question. I find that seasoning before cooking gives a better sear and barely removes any juices. I think this is because it only removes surface moisture. Seasoning after cooking also makes the meat taste more irregularly seasoned. There are probably some dishes where seasoning at the end is preferable though.

Hi John, I used this sauce recipe with chicken, it was delicious. I used more stock and let the chicken have longer in the pan.

I just made this for dinner, I substituted the tenderloin with top sirloin steaks b/c it was way cheaper but it still turned out great. The sauce is perfect.

Hey Chef, quick question: Would it be okay to tenderize the meat? If no, why? I also want to add garlic and onions when I add the mushrooms, would you agree with this change? I also would want to put garlic powder on the meat. Please let me know if these adjustments would be acceptable in your book. :) ps. You're awesome and thank you for what you do!

sorry I dont know too much about your customs, but possibly non alchoholic wine? or i'd heard balsamic vinegar(make sure its the kind without wine in it) is ok for you, and would be similar to the wine in taste just more acidic.

Made this for my dinner party of 5. Turned out amazing. I didn't have sweet red wine instead I used regular white cooking wine was a little sour but then I added some Worcestershire sauce in the end. Came out beautifully. I served it with mashed potatoes and asparagus

chef john i have a question for you... I never had pink meat before...do you think i might like it the first time? I had a bite once in the college cafeteria and it was tough n pink...i dont think so it should've been that way...but i really wanna try, but not sure at the same time ....how is it suppose to taste?

What makes you think that Chef John "has to compromise" ANYTHING?? This is HIS channel, he cooks the way HE sees fit. If it doesn't suit your particular tastes, go watch something that DOES! (Common sense...get some...)

gave this a try and it tasted incredible! however i never get it to look as pretty as chef john's. and my sauce wasn't thick enough. but it tasted so amazing

No. Ethanol has a much lower boiling point than water. Take some vodka (40% ethanol) and a very hot pan. Pour it in the pan. Don't stick your face over it, but just smell. The ethanol vaporizes immediately and the water is left in the pan, and begins to boil moments later. I discovered this with vanilla extract, the difference in smell is more pronounced.

Some balsamic can do it. Not the same, but close. Also, you can find non alcohol grape juice or make your own.

I seem to recall the 3 fats + an acid = a pan sauce trick from another video, except here it's rendered beef fat, oil, butter, and tomato for the acid. Yes? God this looks tasty!

Rice, apple or wine vinegar mixed with some fruitejuice (apple, grape or something sweet like that) The ratios depend on the strength of your vinegar and your taste, you might need to add sugar or salt.

Just cook this for my boyfriend. We both LOVE it!!! Best steak recipe ever! Thank you for sharing! The only downside is the steaks are crazy expensive. Totally worth it though....just can't make it too often. lol

The only change I would make is mashed potatoes on the side with some baked/broiled/grilled asparagus. Then use the gravy on the sauce as a gravy for your potatoes.
