I don’t know why but for 8+ months I have been checking videos because I had a pair of ribs cut the same way as you do here. I finally found this video and it’s about a half hour till I’m probably gonna pull them off and let them rest. Finally seeing somebody cooks short ribs cut this way, I’m feeling really good about my cook

One of your best videos T-ROY. Good Beef Ribs are one of the hardest thing to find where I live in the NW (I am not a yuppy). I can find short ribs more often the the full cut conventional beef rib. I will try this technique this weekend.

I did my beef ribs for three hrs at 250 degrees. When I went out to check them and wrap them I discovered they were done! I was using a Masterbuilt electric smoker so I don’t know if this affected the cooking time. I am mediately wrap them and one hour later unwrapped them and they were very good. Had a little bit of chew to them, But we’re still very tasty. Going to definitely try this again, but with a little more monitoring. Thanks for the informative video!

Thanks again T-Roy! They looked amazing!!! The look on your face when you're sampling shows how delicious they must taste. I wrap both beef and pork ribs after smoking for 2 hrs. Wrapping definitely does wonders for tenderizing. I haven't used butter with my beef ribs though. I'll have to try that out. Keep up the great work sir.

Jeremiah Johnson Give them a try Jeremiah. Beef ribs are next to the ribeye, so the meat on beef ribs is the same quality of meat you get in a ribeye. Good stuff bro!!!

Them look some fine Boy! Email me one! Lol.... You are so correct too, you must render out the collagen/fat before ribs brisket or butts will get tender. at about 198 to 203ºF it's done. These are also called English cut ribs, They have a fantastic beef flavor... Tiger Sauce rocks! Its great on everything, Deviled eggs, boiled shrimp, etc.... Try dumping a 1/2 bottle on a block of room temp cream cheese, Spread it on Ritz crackers or chips for a party appetizer. You can also make a 50- 50 blend of Tiger & Worcestershire & dump it on a block of CC too.

Gotta love plain old salt and pepper. That’s how I do my short ribs for the best flavor, brings out the beef taste. That’s why we do short ribs, right? I do admit that tiger sauce is plenty tasty! That’s one beautiful rib you probed…perfectly tender! Oh gads, that juice in the wrapped ones looked fantastic. Loved the harder crust on the un-foiled ones. Excellent taste test, sir! Hey Troy- My family and I absolutely loved the Fillet's I purchased from Lobel's. Best steaks I have ever made myself. I cooked them rare to med rare and they melt in your mouth like butter. I ordered the USDA Prime short Ribs as well which tasted really good but I could not get the desired tenderness after wrapping. I couldn't fault the product but not sure what I could done differently. Thanks!

Well Troy, I can see why you like your Offset so much... it's a Yoder! I just have a run of the mill Oklahoma Joe Longhorn that I picked up used (used 4 times before the guy sold it). I does okay, but mine won't hold heat as well as yours. That's a finely machined high quality Offset Smoker made from the finest precision-made components.... what a sweet smoker! The Yoders are the Cadillacs of Offsets. My ribs... I like the 3, 2 , 1 method. On for three hours, on again wrapped for 2... then on untapped for one more hours. During the last hour I'll add BBQ sauce if I'm doing the Ribs BBQ'ed. Often I make them pain. I'm a simple rub kinda of guy too... often just salt & pepper or mild all-purpose rub with salt and black pepper. Have a great weekend buddy, and thanks for another informative video...

Great cook Troy. I agree, I would wrap the short ribs also, they look much more tender then those that were not wrapped. I started to pick up some Tiger sauce when I was home on the 4th, just forgot to swing by the store on the way out of town. Next time I am in Baton Rouge I have to pick up a few items

Those ribs were looking mighty fine, like everything you cook. I gotta get some of that rub and that tiger sauce you're always talking about. It's coincidence that I had short rib yesterday, and i'll be it would've been even more amazing if i'd had those two on it. Keep up the great work you do sir!

B Martin You have got to try the Tiger sauce. I love that stuff on all the meats I cook. It gives the meat a little tang of vinegar with some heat, but it's not overpowering. It's great on seafood too. I use it to marinate shrimp for about 10 mins. The shrimp turn out fabulous!!! Thanks for watching!

Nice cook Troy. dont think you can get anything,but good from Lobel's. I like wrapping ribs as well I just fell it puts moisture back into the meat.we all have had to ramp up the heat and no foil for a fast cook,but there is a difference in the way they turn out. great comparison.

I just did a video cooking beef ribs and didnt wrap. Initially they were tender but once they cut up they started to dry out. Defo be wrapping next time.

T-Roy - could you cook the flanken style beef ribs individually like this instead of as a whole plate? I miscommunicated with my butcher and he cut them up for me instead of giving them to me whole 😣 I have four beautiful, meaty ribs in the fridge.

Hi there, this video was shot almost 2 yrs ago, so I cannot remember exactly, but I think the ribs took around 5 hrs at 250F. I think I wrapped about mid-way through the cook. Sorry I cannot be more precise. Thanks for watching!

What is the purpose of wrapping for a portion. of the cook?...just wondering cause I've never wrapped my pork ribs and am about to do some beef shorts....thx

Sorry for the late response! Wrapping will help speed up the cook and help keep the meat moist. I usually only wrap if I'm pressed for time. I prefer the bark on unwrapped meat.

Dang! I wouldn't turn down either version of those short ribs Troy! Looking killer brother! Now I'm wondering how the unwrapped ribs would have turned out on the Big Joe? Do you think it would have made a difference? Either way, a big thumbs up!

Smoky Ribs I bet they would have been a little more moist on the Big Joe, but still not nearly as moist and tender as the wrapped ribs. I was happy to try them both out for everyone. The dogs enjoyed the bones too!!! LOL Thanks for checking out the video Rus!!! Have a great weekend brother!!
