I came and watched you after watching another butcher break one down. I got about halfway through the other video and stopped, because he took way too much meat off with the silverskin, and basically hacked at it to look "pretty". I came and watched you and immediately was impressed on how you handle the silverskin and don't waste anything. Nice job!

I love how you trimmed this. Makes so much sense. Do you feel like the waste is higher doing it this way?

If I was merchandising for profit I wouldn’t do it this way, as I ended up with more ground meat. So in a retail setting, sure it’s a little wasteful, but I would personally rather fill my freezer with some nicer cuts and a little extra grind.

Perfectly done. That’s the proper way! Most us butchers hate clods, strictly for the reason in retail they sell nothing but roasts at $2.99/lb. But you nailed the cuts that are the best. And your right. Most over trim every time! 👏🏼

What kind of savings are you looking at processing a shoulder clod vs buying everything in retail cuts?

It varies based on how cheap you can find the whole piece. Shoulder roasts go anywhere from 6.99 Lb to 8.99 Lb, steaks usually 8.99 Lb, flat irons usually 11.99 Lb, 80/20 ground beef usually in the neighborhood of $5 to $6.50 per Lb depending on where you go. This was a 21 Lb piece at 4.99 Lb.

@@suhaibalmulhim9585 getting rid of the silver and gristle makes the texture better. For grinding the trimmings, we removed the fat and replaced it with a higher quality fat. Fat generally adds flavor, the quality of fat on a shoulder clod usually isn’t great. If I were processing a ribeye for example, I would hardly trim a thing. Thanks for watching.
