in America, we do not see the beef dusted prior to aging, what is it being dusted with (rice flour maybe?) and what are the benefits of this as opposed to bare, to minimize pellicle?

that is one expensive set lmao its not only dry aged 40 days but its also the tenderloin. and then theyre serving oysters and abalone as the sides. has to easily be a $200+ meal.
