I made this last night for tea and it was delicious. To make it even better I had the carrots, turnips, thyme and onions growing in my garden. And my neighbour down the road had given me a topside roast a few weeks ago for giving him a crate of tomatoes that I had left over from the summer harvest. All up this was a delicious meal that I was able to make for very little $$$, and most of the ingredients came from the farm.

I'm from the southern USA. I've made similar beef stew many times but served it with cornbread. I'm intrigued by the crispy dumplings and will try that next stew I make. Thanks for explaining it so well, especially with the measurements. We use pounds, ounces, cups, and teaspoons.

Ironically, the Brits started the whole "Imperial" set of measurements, and now only the USA maintains the use of them and refuses to switch to metric like the rest of the planet. (Well, except Australia. Fun fact: Did you know that an Australian "tablespoon" is bigger than a North American tablespoon? An Australian tablespoon is equivalent to 20mL in metric, whereas a North American tablespoon equals only 15mL. Go figure!)

I love this. After near death illness ive gone back to what i rememer from my 2 grandmothers and some from grandpa who was 104 when died. Im 48 years old. The old recipes made me healthy. Doc in hospital said its a miracle. There you go.

Making this again for our St. Patrick's day dinner. I have a hard time finding suet, so I've substituted vegetable shortening in place of it and they still turn out great. I also use potatoes instead of the turnip. This is hands down the best beef stew I've ever made!

I've watched this video several times and made this stew many times sometimes with the stout and sometimes without. After all this time, and all the fantastic videos of yours that I watched, this is still may favorite. I don't know if it's the calming chef narrating the video or the comforting stew itself, but of all the beef stew videos out there, this is simply the best one. Thanks John , every time I make dumplings , I form them into a ball in my hand which of course Compacts the dumplings . No wonder they turn out hard . Your method is so much better . I have been making dumplings the Wrong way for 65 yrs. Well they do say you are never too old to learn . One question John, I like to add some Strong Chedder to the dumplings should I reduce the Suet and fats if I use cheese .

My late Mum had a trick for biscuits, dumplings and scones: She mixed up the flour, salt, baking powder, a touch baking soda then cut in the lard, then would freeze it for later use. At need she would measure a cup of the frozen mixture and add 1/3 cup plus 1 Tbsp of milk. You can then shape biscuits or dumplings out of this mixture. For scones, she added a few tablespoons of plain white sugar to the frozen mixture and a few raisins with the milk. All 3 of these worked out wonderfully, and i use them to this day. Shredded cheddar, herbs or minced onion can be added to fancy up the biscuits/dumplings a bit.

Made this for New Year's Eve for 10 people....had to spilt into 2 pots (large and medium). It went down a storm, and my first time making dumplings too. I added small shallots and a couple of teaspoons of Dijon mustard and a big splash of balsamic vinegar to the stew. I also used your tip, and bought a 1.7kg silverside joint, much cheaper than several smaller packets of pre-diced steak. I served with baked potatoes (in foil, then opened for the last 30 mins to brown), red cabbage (with onion, garlic, cinnamon, nutmeg and cloves with muscovado sugar, and red wine vinegar) and green beans and mange toute. Easily served 10 with enough left to feed another 4 (I made 12 dumplings). Thanks for making the video....if I could post a photo, you’d see my results!

In 1972 when I got married, my best friend gave me as a wedding gift an enormous Cookbook that has served me well ever since. The dumplings you described where in that book, along with the recipe for making the beef stew to compliment the dumplings. It said in the book, these were the favorite dumplings of President Eisenhower. They have never failed me all these years. I love them more than the beef. They turn out so light and fluffy. I always make extras because they go so fast.

I love John's videos! I love his clear and detailed instructions and I especially appreciate that he shows us how to make his recipes even if you don't have a $600 electric mixer or some other expensive kitchen gadget! I tried this beef stew recipe today. FANTASTIC! It's the best ever. I now understand what the stout contributes (primarily malted grains). I wasn't too keen on the dumplings-- I prefer my dumplings to be lighter and fluffier-- but the dumplings were OK and the stew outstanding. Thanks, John!

She used to make chicken and dumplings on a regular basis and I would gobble them up until I almost burst. Such a joy to see them recreated here. been making beef stew and dumplings for 30+ years, it has always been everyone's favourite. I have tried different variations over the years but always go back to the simple recipe which is the best. I also find that using a roasting joint is much better than stewing beef. Just buy a nice big piece of brisket and cut it into large 2" pieces. Buy using larger pieces, you can cook it to the point where it's falling apart, like pulled beef on the outside, which gives you nice thick beefy gravy full of beef bits, but still have nice big chunks of beef as well. It is also much nicer if you use the beef's own fat to fry it, rather than using oil. then use that remaining fat to fry the onions too. For the dumplings I use 1 part suet to 1.5 parts flour e.g. 1 x 200g pack of suet to 300g of flour. 1 tsp salt 1 tsp baking powder just enough water to form into squidgy balls I tried your dumpling recipe tonight for a change, but everyone still preferred my usual recipe. For the stew, I have always used either mixed herbs or Italian herbs, works perfectly. I also add a couple of tablespoons of Worcester sauce. The original recipie was beef, carrots, onions and buttons mushrooms, but I don't use mushrooms anymore as kids don't like them. I sometimes add whole baby onions for myself and the wife. I have tried various ales over the years, and London Pride has proved to be the best so far, it's stronger than most.

John hi, Your beef stew was outstanding on Sunday. My In-laws were amazed. I plated them up in extra large Yorkshire puddings for fun. And the crispy leek dumplings were enormous and tasted fab. All your tips and experience was much appreciated. I even wet-stone sharpened my knives! I slow-cooked in my Sage electric sow cooker for 4-5 hrs. Then I thickened the gravy with the corn flour, finished the dumplings in a hot oven for 30 mins. That tip of putting the dumplings spoon in the hot gravy was brill. Cheers 👍

I found you purely by accident last night and today I am cooking this stew in my brand new STAUB dutch oven. (It was a toss up between this and and your mince beef and dumplings recipe but your stew won.)This will be the very first recipe I will cook in it and I'm delighted to have found this lovely recipe....CRISPY dumplings? That looks really tasty. Being from southern Appalachia, we usually had a cake of cornbread with our stew. We did eat chicken and dumplings (actual dumplings not phillo pastry) quite often though and I love those, I'll have to try this recipe. The dumplings are fairly similar to the ones I'm used to making, I'm not sure what you call the quick bread we call biscuits here in the States but that's what I was raised on as dumplings.

I fixed this tonight in Irvine, CA with a few substitutions and we all love it. The dumplings are not doughy but rather light and airy. I used a bottle of guiness found at a local store. Just lovely!

That looks wonderful. I had never thought of putting chopped green leek tops in my dumplings but use chopped parsley with a shake of garlic powder instead. Can't wait to try the leeks! My mother and her sisters' beef stews tasted identical with an individual flavour. Years ago bullocks were allowed to live longer and grow fatter, besides being hung for longer. Consequently, the chuck steak which they used contained more fat which they cut out and rendered and then browned the meat and vegetables in it. Because the cattle had lived longer they were more muscular, so you had more connective tissue, which if cooked fairly slowly added to the unctuousness of the gravy. I think beef fat gave it that special taste. There are, of course, still some farmers who produce this aged beef but one needs to take out a mortgage to buy it! As you can tell, I'm pretty ancient. I have to admit that I use vegetable suet in the dumplings although I know there is nothing to equal the suet bought from the butcher which you chopped yourself.

hey john. i just have to say i made this a few weeks ago and it was astonishing how well it turned out, especially for a first go. did it again this week and it turned out great again. have never found so many recepies that work so well, so easily. took me a few goes to get the baguettes right, but now i have then turning out well. the pork pies are another recipe which turned out oh so well first try with my meagre cooking skills. thankyou for explaing everything so clearly. my great grandparents emigrated from northern england/south scotland in the 30's, so it's good to finally be eating some of the recepies from my heritage, i do have some of my great grannys diary and she does mention things like pork pies, gravy and stews about 800 times. the family has been down under for almost 100 years, and with the modern age and its emphasis on fast food, dieting and artificial produce, i feel like that without people like you handing these down, they will eventually be lost to time. even suet isn't all that common around these parts, but i did find some. there are 500 diet cheese options though... thanks again.

That's a pretty nice oven you've got there. It has a well-sized side oven for doing oven stuff, so you can store pans and skillets in the larger sections.

What a great tip about dipping the spoon in the gravy so the dumpling mix doesn't stick to it. Last time I attempted to make dumplings the mix stuck to the spoon, so I tried wiping it with my fingers but then it was stuck to me and the spoon 😂 so much dumpling mix wasted that day!!! Can't wait to try this recipe, looks so good I can almost smell it through the screen 🤤

Hi John I am 68 in December and have made many a beef stew over the years... but I have never bothered with the dumplings as I remember them from when I was young as bland balls of stodge!. But this recipe of your looked irresistable. Oh my goodness what a tasty accompaniment those leek dumplings are and especially with the crusty tops! My husband (also a John) loved it as did I... I love the stew, be it with Ale or a variation with dry red wine. But yours is definitely my goto recipe for crispy dumplings. Even my German family, who were not so keen on dumplings love them when done by your recipe. And they remind me of home, when I'm missing old blighty ❤️

Just made this John using all same ratio ingredients and type except using spring onions in the dumplings and pressure cooked the whole thing for 35mins in an instant pot adding the dumplings at the end for a 0 zero minute pressure cook. The meat is absolutely fall apart and this is a delicious recipe (gets better each day eating it tbh). I would say one thing though that the swede amount is slightly too much of a particular earthy flavour in this and could maybe be balanced out with some tang from something like tomato puree maybe or maybe just less swede. Personal preference though of course. Thank you for passing this on, I'll definitely be making again.

@@JohnKirkwoodProFoodHomemade I can't say I've heard of mince and dumplings but I have made mince on toast (I like my toast rather burnt especially for this) He was very fond of cakes and stuff like that which I don't make any more due to trying to watch my weight and digestive problems. I used to make the Christmas Puddings and Cake and I make a mean mince pie/s Don't make anything like that now. I'm Maltese born and I never took to Christmas pudding or cake but like the mince pies and I still make my own bread.

Yes , but the dumplings won't come out crispy.

thats a posh recipe for the dumplings, ive always just used 2 to 1 flour to suet and added water, plus salt pepper. il think il give this a go next time.

I haven't made stew and dumplings for years John and you've helped me a lot, have friends from England visiting us in Scotland on Sunday and wanted to do a nice hearty meal for them :)
