Criticize. Yeah. A nice plate of Welsh rarebit and some scones with with Devon double cream and raspberry preserve just might do the trick. The for dinner Shetland lamb followed up with Littleover wildflower honey slowly frizzled onto rich Stilton and a whismsy of Graham's 20 Year Old Tawny Port. Shall I say more??

This pudding looked so delicious that I sent all the way to the UK, at great expense, for John's pudding bowl. I expect this great steak & kidney pudding will be starting a new tradition at my home in Salisbury, Maryland. I have really enjoyed reading the memories that this traditional pudding recipe evoked. God bless! UPDATE: The Mason Cash pudding basin arrived, the ingredients were purchased, and the freezing cold weather we are currently experiencing prompted me to prepare my pudding. Armed with John's thankfully detailed recipe in front of me, I made this savory pudding. When it was unmolded, it looked so beautiful with flecks of leek throughout the crust, and the aroma permeated the whole kitchen. The taste was truly AMAZING. Do make the gravy, it really compliments the pudding.

@@alisonholmes5248 Since the bowl and lid are dishwasher safe, I reasoned that it could withstand the steam from the kettle. I greased it well and it performed like a champ.

I am an ex-pat Brit who has lived my adult life in Canada. While working we had big pot luck Christmas lunches at work. As everyone brought more than they could personally eat, it always meant a lot of food was left at the end. I often took a really big British steak and kidney pudding. Few Canucks knew what it was but gamely gave it a try and absolutely loved it. There were never any steak and kidney pudding leftovers. The funny part was when they asked what it was and what was in it. Suet! Yuck. Beef kidney! Yuck! Yet they loved it. Comfort food indeed, and great videos, John. Thank you.

Well John, I made this today and have to say it turned out very well indeed. I added my own twist to the stew by adding some HP brown sauce (steak sauce for all you Americans) and Sechuan pepper corns crushed, and even my Mrs was impressed. I slightly overfilled the bowl but that`s a lesson learned. Thanks again for your instructive video 👍

A great pudding John. I started as a chef in 1965, became a college lecturer in hospitality for more than three decades. We used to make 'snake and pigmy' puddings for our public restaurants, made as individual portions, but always used ox kidey. The leeks are a great idea; we sometimes used parsley , but the procedure the same as yours. I can't see my family eating this, as one is a VEGAN!, but will definitely revive the pud for me and my wife. Cheers John.PS, one of my ex students is Tom Kerridge.

I haven't had steak and kidney pudding for ages and I can't wait to try your recipe, John. My grandmother used to make it, served with buttered carrots and cabbage (no mashed potato, as the suet pudding was considered to be enough starch). Happy memories and proper comfort food for winter. You were born to post this recipe John, looking forwards to making one, my mother used to make great steak and kidney puds, always a favorite of mine, oxo are easily the best powdered stock flavoring, the vegan cubes are good but oxo has the flavor, imho, mushrooms would be a good alternative to the kidneys.

That looks handsome, John. I've always used uncooked, floured steak and kidney put straight into my pudding with raw onion and cooled stock. Then I've cooked the whole thing for 3 to 4 hours. Yours looks very nice, though, and the leek in the crust is an interesting addition.

hey Supergran, my great used to cook these the same as you as well, with just raw steak and kidney and onion, I also remember her steaming them in cloth hung on a wooden spoon, wish I had her recipe but that was 45 years ago now :(

@@IanDDalton I've been married for 47 years now, so my recipe is probably the same as your gran's. To make the suet crust it's just half suet to self raising flour, season then add water to bind. I make mine in a greased basin because I hate the idea of water getting in. Line the basin, add cubed and floured steak and kidney with chopped onion in layers. Then top up with cooled stock till it's just below the level of the meat. Put on your pastry lid and seal well. Cover with buttered, pleated foil and tie with string. Steam for 3-4 hours.

Hello John , greetings from Hebburn South Tyneside , thank you for this timely upload when its cold and wet . This reminds me of me mams suet onion pudding which she regularly made this time of year , we had it with mince in gravy and a pile of mash and some marrowfat peas after getting in from school. Tip I read once was , if you were just steaming in a large pan and did not want your basin sitting on the bottom , place a heatproof saucer in the bottom of pan with a jam jar or similar lid under saucer . If water was getting low , the lid would start to rattle and alert you to top the pan up with some extra water , food for thought.

I learned to cook at quite an early age and also took it at school when I was 11. One of the dishes I was taught was for fruit suet puddings. Gooseberry was the one we made and they are a delicious desert with cream or custard. The steamed sponge puddings are also outstanding but I digress. Wonderful Steak & Kidney Pud recipe!

My mother made the best steak and kidney pudding I have ever tasted. Suet pastry but the meat and diced onions were put in uncooked with some salt and pepper and one tablespoon of water. tied up with a cloth and cooked in a pan of simmering water for at least 5 hours. regards James.

This looks so delicious Mr Kirkwood😋 I go through phases of cooking. Sometimes I'm into stir fries, then into long and slow cooking. Now I'm into steaming recipes! I was going to search for Chinese boa buns, but saw my favourite baker uploaded with the chicken, ham and mushroom pie. I clicked on it, and now I'm binge watching your uploads.😄 I do have to get back to the boa buns as my wife really wants me to try make them. Oh, have your tried, or heard of 'mealie bread'? It's our South African steamed fresh white corn bread. Actually a cake batter. Thanks John. This is what my family calls "Upside Down Pie" when I make it. As a finisher, I like to brush melted butter on it once it has been turned out and put it in a heated oven for 5-10 minutes to give the suet crust a browned and crispy texture on the outside but still fluffy on the inside. Love the idea of adding the leak. That's another level. Thanks for the videos. Keep them coming.

Oh John, talk about timing! I'm sitting here by my computer feeling hungry - stomach rumbling, and wondering what to have, and this pops up. That looks blooming' lovely. Just the thing for a winters day. I had a favourite auntie who used to spoil me rotten and she would make meat puddings for me whenever I visited her. She lived on a fruit farm in Kent and (in her Kentish accent), would ask the butcher for "a pound of puddin' beef and a puddin' clorth" (cloth). She would make up the suet pastry flat on her kitchen table on top of the floured pudding cloth and put the meat (raw meat) and chopped onion in the centre, then fold up the suet pastry across the top so it looked like a flat cap. Bringing up the pudding cloth around and over it and tying it off with string and then steaming in a large pan. She never used a basin. The only slight downside (if there was one), was that the suet pastry was often quite thick, but when covered with her lovely gravy it was all delicious. What a shame we don't eat things like this so much nowadays. Whilst one wouldn't want it all the time, I wish I had things like this more often. I might just have to make one now- and it'll be all your fault! Thanks for posting this..... Best wishes, Mark

Thank you Chef. Always appreciate a new pastry recipe. I was wondering why you didn't cook the leeks in advance but then realized that 1 hour in the steamer would do the job. Thank you for all of the suggestions of substitutions for everyone to personalize. This would be a great change up for a individual chicken-pot-pies or veggie pies as well. My question is... Have you ever taken the finished pudding and baked it to brown the outside a little bit? Would it ruin the pastry? I can see making them a day in advance and warming them up in a toaster-oven. Again sir, thank you for all the time put into creating this instructional and entertaining video.

Always love how clear and simple are your explanations, John. BTW, one small tip from my grandmother (who was a famous chef), is to add a small amount of Black Treacle to the juices, to enhance the caramelised flavour you usually get from browning the meat. This cook's cheat really does increase the depth of flavour. Rick P.S. can you please show us the correct way to make a Beef & Stilton pie? I always have trouble getting the Stilton cheese into the gravy.

HinJohn. Hope you're well? I love suet pastry- sweet and savoury. Made a chicken & veg pie with suet crust recently. Delicious 😋 Being winter and under orders to make loads of mincemeat I have a lot of suet around Thinking about a jam roll poly this week and might add some coconut to the pastry. If nit it'll be apple dumplings with suet crust. Real rib sticking food. Enjoyed this recipe. All the best from Dublin

That looks so delicious and very traditional. My old mum used to cook this dish 50 odd years ago. I was just a kid back then,I have little recollection of the cooking process,I think she used a tea towel?. I have a vivid recollection of the taste,it really was fantastic.

You have some lovely recipes and videos. I've only watched 2 so far. I just wanted to let you know that these videos are so heart-warming for me. My Grandparents were from Sunderland and Newcastle, but emigrated to Australia. They have passed away now, so I savour anything that brings memories of them. Steak and Kidney pie was a favourite of mine as a kid. Although, your recipe looks so much better. I also enjoy hearing your Geordie accent, of course.
