Should you be letting the foods cool before sealing the containers or is that not really an issue?

Honestly, depends on the meal. Somethings are better to let cool completely due to condensation; others can be warm and not have any problems. Things like bread if you put them in a bag and throw it in the refrigerator while it is still warm, you gonna end up with some soggy buns... hun...
