I will make this for sure! Query, can this be successfully made without the thyme? Could I use the tenderized beef steaks? I thought I could brown them first and then let them finish cooking in the gravy.

Tried this recipe for the 2nd time now. It's an absolute hit! Used honey mustard and brown sugar, and swept off the remaining thyme leaves to keep the kick within the gravy. 10/10 will make this gravy till the grave.

This gravy is SO good, I have to resist the temptation to call it "Cream of Mushroom soup" and just eat it right from a bowl! Served this with a prime rib roast for our Christmas gathering and it was the star of the show!

truth: cooking is servant's work. I’ve made that exact base gravy countless times. I’m hear to say it’s glorious. Options abound. Instead of sugar and mustard I add a little Marsala wine or sherry sometimes. Another variation that kicks it up is dried porcini mushrooms rehydrated using one cup of that liquid with one cup of beef stack. Then dicing up the rehydrated mushrooms. That makes it way more mushroom base. You can even skip the beef stock altogether and use all the porcini liquid.Yet another deviation would be to skip the soy and use worsteshire sauce instead. You can also use this base sauce exactly as it is here and add 1.5 cups of crème fresh or sour cream and make a nice stroganoff sauce. So many sauces so little time. Glad I found your channel. I’m a pan sauce /gravy freak.

I discovered you a few months ago. I just got your cookbook last week. A friend of mine was impressed with using the codes in your book to instantly jump to KZbin to see the video. I made this gravy for a Father’s Day dinner for my dad. I made meatloaf and mashed potatoes, with roasted carrots. It was just the two of us. I had to make a double batch of this gravy, because my dad inhaled this, and put it all over the meatloaf and potatoes, and the dinner rolls too. He fell almost a year ago, and shattered his left elbow, and left hip, and lost a lot of weight. So, when it is my time to cook for him, I make what he loves. It is just once a week. Now that it is getting cold here in Illinois, my dad asked when I will be making the mushroom gravy. I showed him this vlog, and he wants me to make the gravy with the ground beef and Amish noodles. I think for my serving, I will mix a bit of sour cream in my bowl. Thank you for making a 78 year old Vet happy. Oh, and I will be buying two more cookbooks for a Hanukkah and Christmas presents. I like the idea of gravy and sauce for meals. When I belonged to a cookbook club I even ordered a sauce book but was intimidated by the thickness of the book, no pictures, either. Your videos make it look so easy.

I love the idea of putting this gravy over noodles with ground beef. My secret ingredient is ground dried porcini mushrooms. It’s easy to keep a small container of them in the pantry and grind up a couple in a spice grinder or mortar and pestle and add the powder to the sautéed mushrooms for a boost of mushroom flavor.

I followed the recipe pretty closely except right before the beef broth, I added sautéed onions and a 1\4 cup of red wine. Turned out great.

@@GrikWorldNomad Try unseasoned rice vinegar. So mild you can use it as a salad dressing all by itself, full strength, no need to dilute with oil.

This mushroom gravy looks great. Mushrooms are not sponges though so they won't soak up a negligible amount of water. I like to clean mine to before I use them. Thanks for sharing. I will watch more.

I made this gravy tonight for my family’s steak and I will say my friend. This recipe is as close as the mushroom gravy I get on my burger at a certain place and it’s by far the closest thing to it I have ever found. Thank you. I didn’t have the Dijon mustard it it was still amazing.

I would add some heavy cream and let.it reduce. I typically give it a dram of Glenlivet and boil it down thick. Good show.

I learned working in an Italian Kitchen that you use a MUSHROOM BRUSH to keep them dry while brushing off the MANURE that they are grown in and inevitably sticks to some of them..

I just came across your channel recently and made this mushroom gravy for dinner tonight. I served it over egg noodles and a smoked eye round that then went sous vide for about 18 hours. With some roasted carrots on the side. Everyone was licking their plates! Thank you for the delicious dinner!

I've been using a variation of this for a while now. I decided to watch it again because I'm about to cook some beef tips and gravy. I forgot he adds the sugar and dijon mustard, I just so happen to have some dijon right now, gonna try it tonight. I did not remember him saying he fries up ground beef with this, which is essentially what I'm doing except with beef tips instead. So just a little explainer what I'm going to do, if anyone wants to know how it turns out, ask away. But I'm going to brown the beef tips in olive oil, probably going to fry up some onions with it. But when that's done, I'll transfer everything to a plate and deglaze the pan with some red wine. Then I'll scrape up all the good beef bits and cook the gravy in that extra beefy goodness. Transfer everything back into the finished gravy to finish cooking and then serve that over egg noodles.

I have taken to frying my mushrooms dry to drive off the moisture. I would have done those in two groups. Fry it’s no oil until they are dry and starting to color. Then do the second half. When they get there dump them all together and add the fat. I fell that I get a much richer flavor and nice color.

I find a good mesh sieve is good for rinsing shrooms. The mesh is abrasive which scrubs the shroom and a spray of water removes the loose dirt.

This mushroom sauce is perfect for serving meats. It can be made with chicken broth to accompany poultry and with vegetable broth and without butter for vegan recipes. Thank you. Final note: You can replace the flour with potato starch, corn, etc. for celiac people.

A nice use for your gravy is in a Hawaiian Loco Moco. Place a hamburger patty on rice, drown the patty with your gravy, top it with a fried egg and a some chopped green onions. Loco Moco is very popular in Hawai’i. It is a very hardy breakfast meal. Onolicious! 🤙

I would love to know what you suggest for low carb/keto people. What is the best thing to use to replace the flour? There has to be something and yet it is something that eludes us all.

Green banana flour works well. That's resistant starch, not "regular" starch. Wife thickens sauces with it and I stay in ketosis fine.
