Im Mexican, and I can tell you something about tacos. They can be made out of whatever you want, yes: any kind of meat, any kind of condiment or sauce including MAYO, any kind of vegetables, beans, cheese, guacamole, fish, shrimp, and so on... any combination of, literally, anything you want. I dont understand the people saying "thats wrong", "you shouldnt use mayo", "it should be done this or that way", etc. If you take a soft hot tortilla, put something edible inside, roll the tortilla and eat that, then thats a TACO. Although I should throw something out here... in México, if you use a soft hot maíz tortilla, thats a TACO. If you use a stiff toasted tortilla, thats a TOSTADA. But I understand and respect that in the USA some people use bended toasted tortillas and call them tacos. Its their version.

In a restaurant where dozens of plates are going in and out every hour he needs to keep good quality without tasting every serving. For those of us without a gas range, you can still give the tortillas their shape if you drape them over the racks in the oven and let the edges hang down. Leave them in there on low heat for a few minutes, and check on them periodically so they don't completely dry out, but they'll be crispy and hold that U shape to load them up with toppings. Corn flour tortillas work best, but regular old white or whole wheat ones work just as well.

hot enough to when you can dash a small amount of water in the pan, and the droplets vaporize. Another way to tell, is if you lay the steak, and it doesn't sizzle, not hot enough. And another way is if you're using clarified butter, when the butter "sheens" or starts reflecting light becoming almost silvery in a way, imo, the easiest, cleanest.and safest way to tell once you see it onces or twice and get a hang of it..

I love how after watching so many of his videos, I'm now able to see him do certain things like nicking the sides of a cut of meat or adding in certain ingredients and immediately understand why he's doing that before he even has a chance to explain it. So many people crying in the comments about how this is "not authentic mexican" WHEN DID HE SAY IT WAS AUTHENTIC FUCKING MEXICAN? NEVER. It's common practice with creative chefs to take IDEAS and alter them or combine them with different flavours and textures to make something that tastes good. It's based on the IDEA of a taco. It's not supposed to be authentic mexican. Who gives a flying fuck as long as it tastes good? That's the whole point of food. The way you make a name for yourself as a chef is not by replicating exactly the "authentic" recipe that has been done millions of times but through creativity. I never make Gordon's recipes but I take a lot of the ideas on board and create my own food. Same goes for ANYONE I see making tasty food. I take their ideas and run with them, that's what cooking is about, not following recipes to the letter!

Only people with authentic cuisine, cuisine that is world heritage would understand (that's why Italians react the same way about fake pizza or shitty pasta). If your cuisine is trash or you don't have cuisine heritage at all (mostly US people because of the lack of culture), you won't get it. And following your logic... If you want to get creative at cooking, then get creative with the fucking name as well and come up with a new one for your fucking Frankenstein.

Dudes I'm Mexican and I feel very happy to see this video and even more exiting watching Gordon making tacos but here in Mexico there's no place that does that kind of shape or puts green stuff on the taco (except for the coriander, onion and the spicy sauce), well probably if you go to the coast and you ask for seafood tacos maybe they will include other kind of stuff however the normal ones are not like that, but I have to say they look great.

Jason Frias I'm an American and a pilot and I've been flying to Mexico the whole month. Monterrey, Torreon, Aguascalientes, and (my favorite) Queretaro. I love traditional Mexican tacos, they are lit especially with the litany of sauces they roll out. But this is good shit too.

Also steaks, unless it's grade A5 Kobe, should have some fat in the pan because unlike bacon, the fat doesn't render out enough to cook the surface. Basting steaks with olive oil and steak juices incorporates more flavour and helps prevent drying.

This isn't his attempt to make an authentic Mexican taco...it's his take on one of Mexico's greatest cultural creations. That's why he emphasized the use of ingredients from all over the world, notice he didn't even use tomatoes which is a staple in Mexican and greater Hispanic cuisine. Personally I like more traditional foods with local ingredients but I appreciate his global take on a Mexican taco.
