This is as classic Southern style as you can get. I whip up some old fashioned Southern beef tips & gravy over rice. I even make some homemade honey flavored cornbread! This has YUM all over it!!!!!

Living in Texas for most of my life and then recently moving half way across the world, I have to say that southern cooking is one of the top 5 things that I miss. Haha! Beef tips are my favorite! I will try this recipe soon, it looks so good!

Thanks Joe, The cornbread wasn't as sweet as the Jiffy mix, so if you like it really sweet add more honey. It really gave a good taste to the cornbread. I liked it much better than using raw sugar.

Amanda, you can use whatever oil you like, but peanut oil does have a much stronger flavor than canola so use sparingly. I have also used olive oil and it works fine too. Thanks for watching!

Angie, I thought by the sound of the recipe, that it would have been amazing! I made a recipe once that sounded terrific on paper, but we couldn't eat it! I don't think it was a waste of time. I just like to see all the guys cooking! :)

Why do I cook? 3. Saves money some times. 2. I love to eat. 1. Hearing the wife say, "MMM baby! That is SO good!" Southern Boy, same southern drawl, and these folks in this yankeetown love my food so much they buy the ingredients if I will make the dish! I had forgotten all about beef tips and rice! Dammit man! This is so very close as to how my mama does it! I used to be the one with the spoon! Constant stirring! Don't let it stick to the bottom! The one big mistake I made years after I was a grown man, was telling her just how much I loved Jiffy mix! She could have cut me in two with her eyes! Don't EVER tell mama how to make cornbread! Made this last night and it turned out sooooo good. Your recipe made me look good. It was easy to make and just heaven to eat. I even added some red wine which I had on hand and think that made a big difference. Thanks for a good recipe!!

If you heat a tablespoon or two of crisco in your cast iron skillet on the stove, and then pour the batter into it...it will give it a nice crust before you bake it! Just a tip I've learned from my family over the years. Once you hear that sizzle, you let it simmer for just a min or two, then pop in the oven. Looks great!

T-Roy I found this today because I want beef stew this weekend. First off I love your shows, been watching nearly all you released this past six months. Didn't search for yours, it just popped up and had to watch. I am glad you kept your humor, ie...wife and tv. Too late tonight, but I'll try a knock off combined with yours and a beef stew recipe I found. How about a smothered pork chop recipe? Either potatoes or corn bread dressing? Cream of Mushroom does it great with potatoes.

lol, i caught that remark about the crushed red peppers,, next time u do this dish, try usin oregano instead of thyme, this is a dish i do quite regularly, and yes, one does need the worscestshire sauce-----rock on buddy, rock on and thanx for helpin larrry out, its good to see people in the world help each other in whatever way they can=====God bless texas

You had me at the cast iron dutch oven! All the rest was just gravy on top! lol! I like to add about a 1/2 cup of the morning's leftover strong black coffee right to the beef broth while the meat's cooking, or put the cornstarch in it, to make the gravy. To me, it just adds a little more richness, and it helps to tenderize...not that you needed it... especially in a beef gravy. That's some damn good southern eats, Troy! That sure wouldn't last long in my house!!!

Looks awesome...gotta try. I always make my cornbread in my cast iron skillet, only I put the oiled skillet in the oven first to get it hot then pour in cornbread mix...it really gives the bottom a crispy crust.

OK, I made this tonight and it was excellent! With a few minor changes. First of all it's just too hot to have a cast iron pot simmering away for three or four hours, so I used my pressure cooker. I seasoned and floured the meat then browned it in the pot in two batches and removed. Threw in the onions, when nearly done, the garlic. deglazed with 1/2 C of dry red wine and reduced until almost gone. Dumped meat and juices back in added more salt and pepper and worcestershire sauce. Closed the lid and pressure cooked for 20 minutes. Removed lid added Gravy Master and cornstarch slurry. DONE! Tender, tender, tender! I made the cornbread in an 8" cast iron skillet in my small convection oven,3/4 C for ingredients. Crisco in the pan and pre-heated it in the oven. I used 1/2 C buttermilk and 1/4 C regular milk plus another Tblsp. I couldn't find the comer peas though (surprise,surprise). Ted

I enjoyed how he made video. was very relaxing while watching and learning and having a couple beers. Will be trying recipe in near future. My problem is always getting meat tender. Always tough or chewy even after cooking long time.

Thanks for watching Robert. I glad you got something from watching the video. Let me know what you think of it if you try my method of cooking this dish. If your meat is coming out tough & chewy after long cooking, it may be that you are cooking at too high of a temp. To get even the toughest of meats tender like I show, you need to simmer or do a very slow boil for anywhere from 3-6 hrs or more. I hope that helps!!

Great question, and one I'm not positive what the answer is. I believe that back in the day when butchers were cutting all the different cuts of meat, if they had left over meat that wasn't fatty, such as the small portion of a beef tenderloin roast (the tip), they would find a use for that meat. In this case they called it beef tips.

Just saw your stuff for the first time....I love the way you cook! Where in the world are you from?... really -- I'd love to know! Not that it really matters, but we Southerners have our own special way of putting things together, and I totally get they way you do things. I was raised just this way -- " a little of this, a smidge of that". I can't wait to try these recipes! Loved the beautiful setting for your opening statements, with the pool behind you, the sound of the wind chimes, and the appearance of your yellow cat! Really loved watching this, and will try to replicate it in my own kitchen. I don't have cast iron cookware, but will do my best to recreate anyway! I sure wish I had a gas stove! I really don't like my electric, although I AM learning to deal with it. All in all, beef tips and gravy with rice, and purple-hull peas and cornbread..............Ohhhhh, it makes my mouth water!!!! I am a huge lover of black-eyed peas and cornbread, but never tried purple-hulled peas before. Will definitely try! (Unfortunately, I have to dose up on both Pepsid and Beano before I can eat a meal like this. :( But, it's usually worth it!) Is your dog a yellow lab? LOL I appreciate you watching the video and glad you enjoyed it. When you cook this meal, any heavy bottom pan would work since you don't have cast iron. Hope you do give purple hull peas a try. I do my tips the same way! but I do add cream stye corn into my corn bread and I do honey also with some charred Anaheim chopped chiles sweet and mild with a kick, we do pasta or just pour over the corn bread. Son in aw eats it like a vacuum!

It turned out pretty good! I added a little too much thyme I think. But it was very tender. The cornbread turned out really good. Hopefully this weekend I'll get a chance to try out something else from one of your vids. And I'm in Houston.

looks great but my grandmother always floured her meat lightly when browning gives it a great color and a great start to gravy since the flour is already mostly there...but again yours looks awesome

Hey Teresa, that's how my Grandma taught me to make it also and sometimes I do dust with flour before browning the meat, but I think the meat falls apart better when not floured. It's all good in the end!! LOL I appreciate you watching!
