Omg this is amazing. I should have searched for a Filipino channel a long time ago! Question: could you fully cook the tongue in the pressure cooker before slicing?

Yes you can! Ours just happened to be really thick.

Yikes, you should have cooked it in the pressure cooker for at least 90 minutes. See that red liquid still draining out??

😂 It was a pretty thick tongue. However, you don’t want to pressure cook it for that long otherwise it’ll be difficult to cut and just fall apart. That texture would be perfect for lengua tacos, but not for this dish. You still want to have it hold it’s shape. Also, the red liquid draining out wasn’t too much of a concern because you still have to cook it for another hour and a half or so.

@@NicRei I have cooked tongue pinoy style too; I guess each family has their own style. Usually the tongue is cooked then you just simmer it in the sauce. Never tried it with corn.
