I love beer battered fish, I have never made beer battered onion rings or shrimp! I also grew up in the early 50''s 60's and 70's lol! Fish has always and will always be my favorite meal! I enjoyed your video, I make my batter very thin and dump in all my fish in at once and leave them in there till the previous batch has cooked, then i just take out enough for another batch! I need to catch some fresh Blue Gill and Crappie so I can cook some more! Ty for sharing!!

Stop by Janna’s kitchen often for new episodes!😃 PS: sounds like you grew up in the very best of days as well! Great memories for sure! It’s time we get back to REAL FOOD and cooking at home is a great way to restore our past!

I have never seen anyone use an electric skillet to fry food before. It's brilliant! I can't believe I haven't thought to do that before. It has a built-in temp control, plenty of room to fry more than two things at a time, and it can be used for more than one purpose. I'm so happy I found your channel.

In the Deep South we Always deep fry the Potatoes last in the oil, what that does is clarify the oil and removes fishy, shrimpy smell and taste ... Been doing that for well over 50 years .. learned it from my Mamaw.❤️
@becomingabetterhomecookwit89158 ай бұрын
Thank you SpiritWomanWalking for sharing your Mamaw Wisdom with me and other readers! So appreciated! (I just want you to know that I will always answer my questions regarding storing or food safety according to ServSafe training.) That being said, I know your MaMaw knows her stuff! Your MaMaw probably used Lard and or Crisco Shortening is my guess? Lard is still a favorite for frying French fries! Fast food restaurants used to use lard back when fries tasted really good! I see the “beef tallow” making a comeback too! Quite a process to make it but I’ll bet it’s well worth the effort once it’s clarified! I love it when viewers stop by and share their knowledge! Dip the onion rings, thin or medium or thick sliced (however you like them!) into flour and shake them off then into the batter! Be sure your oil is turned up to 375-400 for the onion rings! You mentioned your favorites as haddock and flounder/halibut. But, the absolute best tasting, flavorful and textured beer battered fish is shark, specifically thresher shark. Not the least 'fishy' in taste, almost as deep flavor as a good steak. Found at most all good fish mongers or high end groc. stores. Well worth searching out.

Great tutorial Girl , I’m going to try this with catfish fillets, as well !!!! I’ve been making beer battered fish for years , and it has gotten a boat load of Compliments, and I never used self rising flour . I’m sure that self rising flour is good for the recipe , but it isn’t necessary . Mine is always light and crispy , as well .
@becomingabetterhomecookwit89157 ай бұрын
I don’t use self-rising flour 😍 Well, I kinda make it by using All-purpose flour and Baking Powder & Salt! In my written recipe I have suggested for people who like extraaaaa crunchy they can add some cornstarch. But, my video shows my recipe as All purpose flour, baking powder, salt and a beer of choice! Mine is very crunchy, too! I just may make some more for lunch today! I love & crave it! I like the make of your account….have a very blessed day❣️ please subscribe and hit the notification bell!

This lady shows best how to make batter for frying fish and everything else. Do you have some apples left? Add some cinnamon to your batter. Make sure you don't use the used oil from the fish for this.....lol The best part is that you can also use frozen fish as long as you can process it quickly after it has thawed. Pat dry and get started! In my country they pre-fry fish and fries at a temperature of 145 degrees Celsius for about 5 minutes. Cooked, but not brown. Remove it from the pan and let the fat drip off on kitchen paper or a cloth. Heat the oil to 170, 180 degrees Celsius. The fish goes through the dough a second time and bakes until it is golden brown. While this fish is dripping, fry your pre-made fries until golden brown, about three to 5 minutes. I always put some salt on the fish before I add it to the batter. I season the batter itself to my own taste.

Maybe do like I do and burn some candles! Offer to make them onion rings in exchange for you doing a few pieces of fish! (Wink!) Try Haddock or Halibut which has a little less “fishy” aroma to it! Or take your fryer outside! Ha Where there is a will there is a way! If you don’t have an electric skillet ask a neighbor or family if you can borrow one or look on Facebook Marketplace and buy one at a discount or a goodwill/consignment store? Take it outdoors!

Looks great but how long xue u fry the fish based on your sizes?
@becomingabetterhomecookwit89158 ай бұрын
Good Morning! ☀️😃☀️ Welcome to my kitchen! It all depends on the thickness of your fish and the density of your fish. Haddock is a dense fish similar to cod. Walleye is less dense etc. if you are unsure of doneness be sure your oil is not too hot!!! Or the outside will cook but the internal fish will not cook to temp! So keep FRESH oil at 350-360 degrees F. Internal probe temp of the center of the fish should be no less than 145 F temp if you use a meat thermometer. The fish will still cook a short time after removing it from the oil. My thawed, thin haddock filets took approximately 1-1/2 to 2 minutes per side. Larger/thicker cuts of fish take longer. Maybe cook one piece and time and test it before cooking the remaining batch and be sure to not overload your fryer or the oil will cool.

ok dumb question: do you keep or toss the flour left over? Tis same question when I watch n see folks pour a half bottle of oil into a pan - do they just toss it, strain it, pour it off and refridge it ?
@becomingabetterhomecookwit89159 ай бұрын
Dear WNYXev777, Excellent questions!!! 😃 Thank you!! I wish you could! But it is not safe to save the flour you have used. Even freezing flour does not get cold enough to stop bacterial growth. So the County ServeSafe courses say it’s a big No No😮!! You can strain the oil and freeze or refrigerate it for up to two weeks. However, know the fish/shrimp/onions will still carry that aroma and flavor in the oil!! Thank you for stopping by Janna’s Kitchen! Please subscribe to my channel and look at my other 67 videos! You might want to use a thermometer when checking the temperature of your oil; I can tell by looking that your oil isn't hot enough to fry fish in.
@becomingabetterhomecookwit89158 ай бұрын
Thank you JerrieFischer 😃 I appreciate your observation very much! I cook it at 350 in fresh oil for a reason … so the outside doesn’t cook too fast and get too brown and the inside be gummy next to the fish and the fish undercooked. I am capable of turning the temperature up but the result is not the same. But if you choose to cook your fish at a higher temperature you are most welcome to do so! One thing I love about sharing recipes is how everyone has the ability to change things up to their own preferences! Hotter, cooler, spicy, less spicy, sweeter, less sweet etc! Just be sure you use fresh oil!
I use clean oil! (Not used previously!) I use peanut oil but I get the same result using Wesson or Crisco Vegetable oil! The most important thing is the temperature of your oil (and clean oil) have an electric fryer of some type (deep fryer or electric skillet like I used) or have a thermometer. You don’t want your oil too hot or the outside cooks too quickly and the fish may be undercooked. I found a constant 350-365 Fahrenheit temp is perfect! I use all-purpose flour. (Add a tablespoon or two of cornstarch if you want an extra crunchy fish!) serve immediately!!! Or steam from fish will soften the outside. I ask if you would subscribe to my channel and be sure to hit the notification bell so you get notified of my new recipes! Did you see this weeks recipe for beer battered fish tacos!?!
