Agreed. You don't need the entire spice rack to make good food. For example, i love making cottage pie. The only spices and seasonings i use are salt and pepper. Let the ingredients speak for themselves. I could add some thyme and/or rosemary, and that'd be nice, but you DON'T NEED IT. If your dish is good, it'll be good without needing the "cheats." The natural flavors of the food will carry the dish.

I made this recipe last night for my son and I. I have never been to the UK so I don’t have any experiences to compare mine to but I can imagine that this recipe is what someone would get in the UK. I followed every detail of the recipe. I even used a digital scale to get my measurements correct. I have eaten fish and chips here in the U.S., South America and Europe. This was the best fish and chips that I have ever eaten in my life! My oldest son told me that thisnwas his favorite as well. My youngest son, who doesn’t like fish, tried it and like it a lot. I used halibut and Russet potatoes. Absolutely incredible. Excellent video with proper instructions. I will be joining the Patreon. Thank you, thank you, thank you.

Hi John, back in the day, my mum used to use something called 'Bird's Raising Powder' in her batter, it came in a tiny tin. Eventually it became unavailable, so I wrote to Bird's to ask why. They came back and said it had been discontinued but if I wanted a substitute, add a small amount of Turmeric to some baking powder. It's been our family tip for a long time.

We call the extra bits "extra crispies" here in Texas where I'm from. Sometimes my Grandma used to add a little extra flour to the batter, to make it thicker, and fry 'em like little pancakes. We called those "dummies" since they imitated the food, but were just batter.

@@davidtemple5934 I’m just a poor old Southerner , who spent a good deal of time in the North West, and I don’t think that John will take umbrage on account of a small, but significant (to some), error, which appears quite complex, if one delves into the history. The subtleties of accents from the area is beyond me, and in my ignorance, I can only lump them together and label them as ‘Geordie’. Walt Disney has given Winnie the Pooh a Northern burr, which may remind Americans of the character, whereas I like to think of Winnie the Pooh as having an accent of the period in which the book was written, and from that part of East Sussex. It doesn’t matter much really, but I’m going to try the Fish and Chips recipe very soon. There’s nowt better than good Fish and Chips, wherever one lives in the U.K.!

Here in the States there was this cartoon I watched as a kid called _Ed, Edd, & Eddy_ about a trio of three namesake friends and their harebrained attempts to make money, frequently through the construction of elaborate jerry-rigged rube golberg devices. I will however be having bread crumbs on my fish as that's how it came out of the packet and it'll be cooked in the air fryer. When I moved to West Yorkshire from Liverpool I got fish & chips. The woman asked me if I wanted "scraps" and I thought she was asking me if I wanted multiple fights at first! 😆😆 (I had never heard of this term/extra product). They are lovely. Great video!

I failed to add the salt onto the fish fillets and place on paper towels to drain, before cooking. I also made the mistake of adding the salt to my batter. Hi John, Kiwi here and I've been brought up on fish and chips. All through my childhood we usually had Fish and chips every Friday night, then as a uni student, at least once a week and so on ever after. Here the batter is the Intellectual Property and for each chip shop its their point of differentiation. Every suburb has a couple of shops and they are always extra generous on the chips so there is absolutely no need to cook at home. These days I live in Japan and although their Tempura is absolutely divine, they don't really get Fish and Chips. I'm definitely going to try this recipe at home. Thanks so much for sharing.

Can’t wait to try your recipe! I have tried making fish & chips in the past, but never quite got it right. To say I miss true British cooking is an understatement! I have been making sausage rolls based on your recipe for a while now - I used to have a hard time figuring out just what sausage and seasoning to use & never could hit it until I watched your video. We used to call fried batter, scraps, from a chippy called stretches, they were amazing, that's a long time ago. Now we have had the chippy bank in ulverston for about40- 50 years and they've never let us down. So jealous right now lol x

This is a true story about the lead singer of def leopard. When he was young on a Saturday him and a couple of the band used to go into Sheffield to purchase the latest records with their spending money. They'd be left with a few pence and would go in the same chippy and ask for a scrap butty with what they had left from purchasing the latest record.

Boiling oil is dangerous, but if you invest in a electric deep fat fryer then the temperature is regulated, if you do as John says there is virtually no danger. When cooking anything always be in the kitchen with it and you should be fine.

I have lived here in Sacramento, Ca since 1981 having immigrated from Manchester, England and that recipe just makes me want to find a good fishmonger here.
