Chef Tom fires up the Kamado Joe Classic III Ceramic Charcoal Grill for these incredibly juicy Beer Braised Beef Ribs. They are first braised in a beer based braising liquid inside a cast iron Dutch oven, then finished with a high heat sear, directly over lump charcoal.

Hey Chef Tom, I'd love to get your idiot-proof tips on starting a charcoal bbq up. I feel like every time I start one up, I'm working 10x harder than i should to get it ready to grill. Thanks for all your videos!

Make a small pile on one side of your grill. Light them and let them burn for about 15m. The trick is your fire is ready once the Flames are gone. After the flames are gone ur charcoal will now look white thats ash so you can move them to your other side and u will see the hot red and ready

Excellent recipe. I do something similar that I call 2-Can Ribs. Two cans of Coke and 2 cans of beer. That's probably the only difference in our recipes. And the honey mustard. Lol. I mostly do country style ribs because it's hard to find the beautiful dinosaur beer ribs around here. Great job.

it's always disappointing when you go through the ingredients. it's like: Onions: "ok cool I can do that" Carrots: "mhmm mhmm check" Chipotles in adobo: "...sigh..."

Eran Boodnero chipotles in adobo sauce usually come in a can in the Mexican isle next to Sazon and taco seasonings. Just ask your local grocer. A lot of times you can find dried chipotle and adobo peppers online or during the summer in the produce isle.

You basically boiled them in beer which will extract beef flavor due to water content instead of braising..... then you over season the over cooked meat into an uncontrolled flareup to make sure all your newly applied spices become bitter and burned. Brav fkn oh

Looks great. I'm curious about the braising liquid. Is there anything to be done with that after the meat is removed?

Add celeri, a nice turnip and leek before you braise, and once the meat is done you have a light soupe. Sieve it and you have a good beef broth.

I've been trying everywhere local to get plate ribs like that. Apparently not a popular cut in Northern Utah. Any good online sources that don't cost an arm and a leg, Tom?

you should be good, alcohol cooks off lower temp (190F) than water boil, so it should be safe

I think I'd prefer them smoked, but variety is good. Kudos on using award winning beer, although I would've gone with the champagne of beers

Chef Tom, I love your videos! What can i use if I don't want to use beer? (I know. You are laughing right now. But humor me!) Another question: What was the pot you used for braising? It looked like an enameled cast iron. Brand name you like?

The pot looks like a Le Creuset www.lecreuset.com/round-dutch-oven/LS2501.html and you should be able to use something like Dr Pepper or even just beef broth. Braising is just about using a liquid other than water to steam the meat.
