Hi Mary, congratulations on the new WSM!!! Just remember that it may run a little hot and be hard to maintain temps for the first 4-6 cooks. After that time, you should have enough carbon build up on the inside to help insulate the WSM and it will be easier to maintain temps. Plus, the food tastes better and better with each cook. I am going to try this on Monday. Tomorrow is your ribs on the kettle, reverse sear steak Sunday, and your beer can chicken (with hight test Canadian beer ) Monday. Hi JC, I actually did think of doing that, but didn't want to cut my hand open attempting that. Forgot about using a can opener, but did consider using an old knife to cut the top off. It turned out way better than I ever expected, so all is good. Thanks for the comment and for watching!

just a tip I actually got the aluminum beer bottles and cut them down and sanded the ink off the bottle. They are stout enough I can reuse them!! I cut them down to size with some metal shears!

Emu is more like a crossing a pheasant with chicken...tough but tasty when cooked slow,especially the leg and back portions wrapped and tied around the can holder. Well done and keep up the good work.

I did mine on a low slow on my WSM 18.5. Used 4 chunks of wood. 1 hickory, 2 apple, 1 cherry. It's only my 3rd go on the WSM so don't judge me too harshly! Kept temp at 225-250 and it came out a bit dry. Not too bad, but tasted way over smoked to me. I read poultry takes on the smokey flavour way more than other meats.. Keen on any thoughts as it was a little disappointing! (Leg of lamb for 5 hours for my second go on the WSM turned out great). Oh - I'm in London England!!

The WSM makes some wonderful beer can chicken, but I have found that when I do it low & slow, I usually end up raising the temp of the WSM to 300F or so in order to crisp up the skin a bit. Otherwise, it is rubbery. I appreciate you watching!

+Benny Kal Hello Benny in Australia!!! I always test the legs to determine if the bird is done. If it is done, the legs move around loosely in the thigh joint. It will probably take 4 or 5 cooks on it to get it broken in and able to maintain temps, but once you get that carbon built up on the inside the WSM is truly a set it and forget it smoker. Next time you do a beer can chicken empty out half a can of beer fill the rest of the way with sweet onion and garlic once the chicken is done cut open the beer can put all the goodies on the chicken

If its just a Chicken contest you took it, the fresh herbs under the skin did it for ya...nice touch. Moonshines looked great but I think his weber got a little too hot and dried him out a hit. As far as a dinner plate as a whole Moonshine took the meal as a whole. Just my 2 cents.
