Jasper, thank you for another great video! You're doing a great job of educating folks, much appreciated. I help folks design brewing systems and realize their dreams of starting a brewery on a budget. I have a conversation about these heating methods almost every day and your video nails it pretty well. One thing I would add is that with excellent control systems you can overcome the ramp up time with electric kettles.

another excellent video. in my experience the direct fire kettles do a much better job of caramelizing wort, as opposed to their steam fired brethren. my first brewing job was on 14 BBL Pugsley "direct fire" system; it used a concentric ring of burners to control the boil, unfortunately the valves supplying the burner/manifold were within the boil over danger zone. it also had a tendency to back draft, & on one occasion claimed an inch or so of my mentors beard. your brewhouse appears to be light years ahead of the system I cut my teeth on.

Being a homebrewer I like direct fire. I have a nice multi ring burner that heats evenly with having a bunch of scorching in the kettle. Great videos Jasper! =)

Depending on the set up you have with steam you have other advantages, for example you can use the steam for sanatizing equipment or kegs etc

One can speed up electric boiling by dropping the pressure on the kettle although it makes hop additions and a few other functions a bit harder.

Lower pressure definitely lowers the boiling point temperature of a liquid. However, the best breweries have pressurized kettles to raise the boiling temp to 225F. This is optimal for isomerization and driving off volatiles. Can the public taste the difference..who knows but I wouldn't lower that boiling temp too much. Jasper, I was wondering if you've heard of/ had experience with indirect fire kettles. I remember reading on one of the brewers forums about people using them, and it sounded like they had most of the benefits of steam without the increased cost and footprint.

I mention indirect in this video... so yes I've heard the terminology. Engineering design differences are cool to learn about and what separates good manufacturers from bad.

About your older kettle, does it heat the wort with direct contact (rims) or do you heat the water and passes it to another kettle from the jacket?

What is the reasoning behind dimpling the jacket (I see that you did that to your first system)? Creating cavitation to enhance heat transfer? Thanks very much for sharing the higher technology (and pros/cons) viewpoint from a seasoned brewing veteran.

The jacket was already on the spaghetti cooker like that for their steam system. I just added flanges and ran it electric.

I think if you dont have the dimples to create turbulence you can end up with a sort of water current running around the jacket and uneven distribution of the heat.

In my previous job we worked with a 5 bbl kettle heated with steam. Although it was indeed very fast we had frequent boil-overs and couldn't sustain a really vigorous boil because of that risk. I think it was due to negative pressure building up inside the headspace, but never got to completely understand it. The kettle had a wide condenser pipe connected to the top and coming down close to the side wall with two cold water sprayers inside which didn't seem to be very helpful. Maybe you can do a video about boil-overs if you are familiar with that problem; I've seen it in other micro-breweries. Thanks!
