About Us.
Byther Farm is a small organic homestead, being designed and managed using permaculture practices. We aim for self-sufficiency in fruit and vegetables for increased self reliance and better resilience to the modern world. I recognise that we are unlikely to be truly self sufficient, but do the best we can. I share our home with my loving husband, Mr J and our cat, Monty.
We are a fifty-something couple who live on a smallholding in Carmarthenshire, Wales. We are going green and creating a gentler, cleaner and more healthy life for our family.
Having had a highly successful smallholding in Monmouthshire, we hope to recreate the abundance at our new home. There will be a large organic kitchen garden with no dig gardening raised beds and young food forest in which to grown our fruit and vegetables.
We keep a few sheep and Aylesbury ducks.

I cover all my beds with compost material and then cardboard. I'm not so worried by the cold but the wet. It's been such as wet year and we're under an orange warning for rain here in West Cork. It looks like we will have a minimum of 5 inches before Friday. I think we're in for a wet winter.

I grew Greek gigantic beans this year for the first time after buying them off of Amazon I absolutely love them and had a good harvest. I was so excited to try some thing that you grow over in Wales.

When I filmed this on Thursday last week, I was getting ready to visit Tanya at Lovely Greens for the weekend and the weather forecast said the temperatures would be low at night and high-ish during the day - there isn't much sign of it having been high-ish, so I'm very pleased that I did this prep work.

Thanks Margaret! I only learnt about fuschia berries a few years ago. I don't eat them often, but once I have lots of plants (and therefore, lots of berries) I plan to make some wine from them.

I have a dried bean cooking day once a month - soak and cook the beans then freeze them - no more forgetting to soak dried beans before use

Same haha. I love to keep cooked beans and chickpeas in the freezer to so that I can use them as and when I need them. It saves having to cook them every time you need them or buy gross canned beans/chickpeas.

Looking great! I’m pleased you also pop cuttings in a glass of water, I think they keep better than in a plastic bag sweating

I just took down my Greek Giant beans on the weekend...I had to get a ladder out as the bamboo teepee was 12 feet tall! I will be canning some because I too am rubbish when it comes to thinking ahead and soaking them. That allows a bit of spontaneity in my winter soup cooking. ❤

Butternut squash/pumpkin makes yummy soup, can add all kinds of different things, if you like Thai food, add some Thai curry My favourite is a bit of fried bacon, grated cheese, yoghurt But there are many more variations of things If you like soups that is 😀

Liz, my Kuri squash failed too but….there were lots of seeds in the compost and they all grew.Thinned out I got 30 Kuri squash.Lovely in risotto with sage or soup with leeks!

I have harvested my butternut squashes and pumpkins. Emptying the compost bins and setting them back up again. Planting garlic. Taking in tender plants. I need to mow the grass again too.

We managed to mow the grass last week after 4 days without rain, the ground was still very soggy though.

Hi Liz. Thank you for sharing. Can you please tell me what gloves you wear? I always see you with those black ones and they look like excellent waterproof protection and getting your nails dirty. 😍

They are black surgical type gloves, they come in lots of different colours.

Hi Liz Have you tried covering with Woodchips an leaving the Woodchips AS a 4 Inch mulsh. Regards Douglas

Yes, I did that in the orchard in my previous homestead. Sadly I have to pay for wood chips here, so use them sparingly.

Greek Gigantes are a type of runner bean and therefore have the potential to grow as a perennial plant. How well each plant survives the winter depends on how harsh/wet/cold the winter is that year and the location of the plants.

I can't sell seeds as I don't have a licence and seeds cannot be sent internationally to USA. Try a health food store selling them for eating, but make sure the dried beans are organic or they could have a growth inhibitor sprayed on them.

Depends where you live. They would normally be hardy in most UK situations.

I did all this last weekend. I don’t have a 1/5th of your garden but cleared the Polytunnel for winter veggies 🧅 🧄 and harvested my 🌽, I also think these will be for next years corn. Lots of leaves falling around me so focusing on creating my own compost heaps this year 🤗 thanks for all your tips 💜 your channel is invaluable to me as a new Gardner (it’s a steep learning curve 🙃)
