I have the same one and I did two 15 lbs turkeys for Thanksgiving and then a couple weeks later I did a 15 lb Brisket all with no problems. I also like you put the cast iron skillet in the bottom as I watched many reviews about that crap bottom pan. My only issue so far is the thermometer but I'm going to invest in a good digital thermometer.

When I'm getting into something new I always go cheap. It helps you to get an idea of what to look for if it's something you want to invest more into. I've had a junky barrel style for years and just picked up a used electric to give that a try. If I don't like it I'll probably go offset

We picked up a like NEW Smoke Hollow cabinet smoker just like this model at a estate sale about a month ago. I couldn't believe that no one wanted in on it (Auction) and paid $20.00 for it with a half full LP tank. The Widow of the man that owned it told us it was only 3 yrs old.. And only used a hand full of times to make deer jerky. While looking for a manual and replacement parts. Some one broke the regulator on the tank side. We discovered the Masterbuilt bought Smoke Hollow some time back. And they still offer replacement parts for them. $12.00 later we got it up and running. What I like is the racks and everything inside of it comes out and fits in the dish washer and cleans up PERFECT. The chip pan on this one is cast iron and has the Smoke Hollow logo on it and a nice cast handle. We put 2 racks of Beef ribs in it and two whole chickens on the top rack with the beer can method in one of them. I was very impressed with how well it held temperature. Just on low it kept a constant 275°F. We added a half of a bottle of cheaper (Moscato) white wine to the water pan. Im not sure that something thats needed. But I read it on the internet, So it has to be true. LoL. Good video Sir, We're going to give the chunk wood a try. A buddy gave me a gallon jug of Cherry wood pellets to try. I think I'll try chunk wood a try the next go around next Saturday. I'm thinking a pork shoulder roast with something garlic on it. Btw, Love the Pew Pew T-shirt.

Great video Boss. A few questions for you. 1) After I got her smoking I closed the vents not all the way just a little, and it went out. Not sure if it overheated and automatically shut off 🤨 2) Do you soak your wood chips in water? Thanks brother. PEW-PEW!!! Oh, btw, I found my smoker on the side of the road. Everything was there. Just needed a good cleaning.

@@rileycpo thanks for the kind words! I do not soak my wood in water. In my opinion, it’s unnecessary. Use your vents to help control temperature and the amount of smoke you want on your meat. The more you open the vents, the hotter and cleaner your fire will burn. More oxygen=hotter fire and cleaner smoke. Smoking is all about experimenting. Play around with your smoker. Eventually you’ll find the settings that you like! Good luck, have fun, and keep me posted! 💨 🔥🤙

Hi I have the same smoker you have and I love it. I want to let you know that you can smoke a brisket in that grill if you like I have done it with propane and charcoal with this grill no problem at all you just need a good charcoal basket and you will be on your way to having a good brisket on this grill.

You can definitely smoke a brisket flat. But a whole “packer” brisket would be tough to fit in there. I don’t think a 13+ pound packer brisket will fit.

I went from the MB electric smokers and switched to the Masterbuilt Propane XL... $360 bux and I turn out the best meat ever,, spatchcocked turkey, prime rib, brisket etc... With the wood chip tray on the bottom door I'm able to smoke the best cheese in the winter and control temps perfect with that set up. So easy to use and don't have to worry about dismantling jammed up pellet hoppers.

With the thermostat in the Propane XL, you can control the temps so good. Recently made smoked meatloaf sliders topped with homemade cole slaw on the Kings Hawaiian pretzel buns. Used the mini foil pans as a mold for them. Slices up to the perfect size for a slider bun.

Could you use whiskey instead of water as the evaporating factor for the whiskey to evaporate onto and into the meat instead of soaking the chunks or getting whiskey flavored chunks?

Great video, I’ve been smoking meats for about 4 to 5 years now without a smoker, and last nights my wife and I went up to her property in Waverly, Ohio and there were two Madterbuilt propane smokers just sitting in front of the house and I figured it was a gift from the Grill Gods, and I tell her to pull up my last search on my phone on the internet, OfferUp and eBay, and because I was literally just looking for one to buy, and instead of driving my suv or her jeep I wanted to take the ride in my budget 2002 Jaguar X-Type that I’ve been working on and if you know this car then you know it’s a small sedan and I promise you I was determined to get this one of the smokers back home in Cincinnati, and I promise you I did after taking the legs off, and now I’m sitting here washing everything so that I can oil it up and realized that damn after five years of smoking meats I don’t even know how to use this an actual smoker 😂😂😂 but I’m glad I clicked on your video because you literally gave us the insight of this particular smoker and how it works and how it holds up with all the rusting and what you used to keep it going, I love it brother, keep it up and wish me luck you now have another subscriber 🙌🏾 Edit: I’m subscriber #172 💪🏾

With a propane smoker, you can control the temperature by lowering the gas and closing or opening the dampers.

I clean the shelves if there’s any leftover food on them. I don’t really touch the inside walls unless there is an excessive build up. Basically clean up any excess build up of grease to prevent a fire. “Seasoning” a smoker comes after you first buy it before the first use.

@@fenceman7067 try and keep your smoker temp around 250 degrees. Figure on 1 to 1.5 hours per pound cook time. Take it to around 200 internal temp on the pork butt. But more importantly, it should feel like melted butter when you you probe it for temperature. I’ve taken them to 205-207 internal temp before. Everyone screws up smoking meats. Just keep trying!
