PRAWN CURRY - After a LOT of requests, I had to make this recipe! And what's more, I'll show you an easy method to clean and de-vein prawns.

PRAWN CURRY/MASALA
Preparation time 10-15 minutes
Cooking time 20-25 minutes
Serve 2-4
Ingredients
For Paste
2 no. large Onions, sliced, प्याज
1 no. Green chili, broken into half, हरी मिर्च
1 inch Ginger (peeled & roughly chopped) अदरक
8-9 no. Garlic cloves, लहसुन
½ tsp Cumin seeds, जीरा
1 tsp Coriander seeds, धनिये के बीज
2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
For Tomato Chutney
2 tbsp Oil, तेल
½ inch Cinnamon stick, दालचीनी
¼ tsp Cumin seeds, जीरा
½ tsp Fennel seeds, सौंफ
¼ tsp Nigella seeds, कलौंजी
¼ tsp dry Fenugreek seeds, मेथी दाना
¼ tsp small Mustard seeds, छोटी राई
½ inch Ginger (peeled & roughly chopped) अदरक
6 no. small Tomatoes, roughly diced, टमाटर
Salt to taste, नमक स्वादअनुसार
2 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ cup Jaggery, गुड़
1 cup Water, पानी
½ cup raw Mango (peeled & chopped) कच्चा आम
For Prawns Curry
2-3 tbsp Oil, तेल
Prepared Paste, तैयार किया हुआ पेस्ट
Little water, पानी
Salt to taste, नमक स्वादअनुसार
2 cups Water, पानी
⅓ cup Tender coconut, roughly diced, नारियल की मलाई
½ cup raw Mango (peeled & roughly diced) कच्चा आम
½ cup Water, पानी
1 ½ cups Coconut milk, नारियल का दूध
Marinated Prawns, मैरीनेटेड झींगे
1 no. Green chili (less spicy & slit into middle) हरी मिर्च
1 no. Green chili, slit into middle, हरी मिर्च
1 tbsp Cornstarch slurry, कॉर्नस्टार्च घोल
For Prawns Marination
500 gms Prawns (clean & deveined) झींगे
Salt to taste, नमक स्वादअनुसार
1 tsp Lemon juice, नींबू का रस
For Garnish
Tender coconut, julienned, नारियल की मलाई
Coriander sprig, धनिया पत्ता
Process
For Paste
● On a mortar pestle, add onions, green chili, ginger, garlic, cumin seeds, coriander seeds and grind it coarsely.
● Transfer it to a tray, add turmeric powder, degi red chili powder and mix it well.
● Keep it aside for further use.
For Tomato Chutney
● In a saucepan, add oil, once it's hot, add cinnamon stick, cumin seeds, fennel seeds, nigella seeds, dry fenugreek seeds, small mustard seeds and let it splutter.
● Add ginger, tomatoes, salt to taste, degi red chili powder, jaggery, water and simmer it for 7-8 minutes on medium flames.
● Add raw mango and cook it for a while until mushy.
● Transfer it to a serving bowl, serve hot with prepared prawns curry and steam rice.
For Prawns Curry
● In a handi, add oil, once it's hot, add prepared paste, salt to taste and cook it well for a while.
● Add water, tender coconut, raw mango and let it cook for 5-6 minutes on medium flames.
● Add water to adjust the consistency, coconut milk, marinated prawns, green chillies and give it a quick boil.
● Add cornstarch slurry and simmer it for a minute.
● Transfer it to a serving bowl, garnish it with tender coconut and coriander sprig.
● Serve hot with steam rice and prepared tomato chutney.
For Prawns Marination
● In a bowl or tray, add cleaned prawns, salt to taste, lemon juice and mix it well.
● Keep it aside to marinate for a while.

Looks yum. But sorry to say I was disappointed to see corn starch go in this curry. Maybe if we add less water, we can avoid corn starch. Secondly, the recommended cooking time for prawns is around 4 minutes, so as to retain their nutrition value.

Direct gravy me prawn dalne se heek nhi marta kya? Hum log thoda roast krk fir gravy me dalte h prawn. I’m maharashtrian but not very fond of prawn also I think the constarch slurry you added is not necessary we can add any better alternative to thicken the gravy. I always love your way of cooking but this is the first recipe I’ve encountered that I don’t like; I just couldn’t connect with it. Waiting for another prawn curry recipe ❤❤❤

Almost perfect but you missed adding curry leaves. Curry leaves , coconut milk and a dash of crushed black pepper is how Kerala style Prawns Mango curry is finished.

Chalo - after 2 years of asking “how to best cook Prawns”; aaj ye recipe aa gayi. Lots of people would comment on my comment asking me to go and check other chefs/ home cooks; lekin kya karen Sirji- aap se loyalty thi na. I am from Konkan and we normally cook prawns from the beginning; check out any recipe… I saw the concept of cooking prawns for. Hi Chef Ranveer .. my humble question to you .. 11.43 you added water and at 12.43 you added prawns and said the curry will get the flavour of prawns Now.. so . my question to you .. instead of adding water at 11.43 , if we add a reduction of prawn heads ( prawn heads first sauted in 1tbsp coconut oil and water added later) will it not impart more umami and rich prawn head butterry taste to the broth ? thanks .. greatly appreciate and await your reply..

It's always better to saute the prawns in mustard oil and then add in the end and also you can skip the tender coconut pieces and green mango . It will also taste very nice.
