Wish you were closer so we could buy from you. This is a timely video too. We just put in a cut sheet for a whole cow we bought from a rancher in PA. The last two years we bought a half-share and we we went with the butcher recommendations for the cuts/packaging. This time I did a bit of research to try and understand what we could get . . . ironically I used the Piedmont cut sheet template as a guide for my discussion with the butcher we're using up here. It's a good template with explanations and was very helpful.

We love Piedmont! I can speak to getting someone else’s meat back at a custom processor. Picked up a couple hogs we had done at a place in SC stopped to get gas on the way out and just got curious so looked at my boxes and had 5 or 6 boxes of someone’s else’s cow 🤦🏻♀️

Wow, that is an impressive meat processing place. I've been to a small butcher to pickup my freezer pork before so I thought most places are like that but this place look so professional and well run. I wonder if there's anything close to this in Northern Virginia where I live. Probably a good way to find where to buy meat from is to just ask them for their list of small farm customers haha.
