My mom side of the family is from Belize city and she passed when I was very young, but one thing i remember is coming home from school and her making Belize bun and all types of food. Hi Fitange, I always love hearing from you. Can you eat this one on your eating plan? This is the staple food in Belize. Took me a lot a years to get it right. Joe is The Boss when it comes to making this. Even my mom took her hat off to him on his skills on this dish. Joe can walk into anyone's home and see this dish going bad while cooking and take the pot over and fix the problem and salvage this dish.

I have over 100 Belizean recipes here, but I love the other items I have too. This is the main reason I didn't call the show The Belizean Cooking Show. I wanted to cook all types of delicious stuff and knew I would eventually run out of recipes that were authentic to Belize. As long as the dishes are simple to make, I'll make them. Is that 2 1/2 cups of the rice or after it's mixed with the beans? I would only cook 1/4 of the package of beans and then add the 2 cups of rice...That will swell to 4 cups of cooked rice and beans. Does this help?

My mus was from Belize and she use to make us red beans on rice,but she would soak the beans overnight then boil the beans for about 4hr the next day,then add pepper,salt onions,garlic,bacon,chives,and ham hocks and boil it all for another 4hr very slowly,leaving it to sit overnight and when we came home from school she would serve it on a bed of rice that she would boil separately.. yours look mouth watering to xx

Hi, I actually use kidney beans for stew beans and white rice and use pinto beans for rice & beans. My mother told me that was how Belizeans cooked back in the day. I use goya's kidney beans, they are better and Joe is right when they are pinker they are better. I have to congratulate you on marrying a good man like Joe. He is the first Belizean man that can really cook. My father would come home, wash his hands and sit at the table until he was served. My mother still serves my brother =)

Asian rice rule, never open the pot until 25 minutes after it has been simmering (Boil 7 minutes prior then simmer). LOVE YOUR SHOW!

Hi TheBelizeanborn..you got me all worked up with mommy serving your dad and brother. My mom does the same thing. It drives my sister and me crazy. My dad knows how to cook a little too though and now he has to cater to mom during her illness. I've heard so many people say they use Pinto, but I think at my granny's house all them people knew about was red kidney. lol Joe hates pinto beans so much he would kill me if I cooked them for him. Personally I'm a Split Peas person. Will make that soon.

Every Central American Country makes Rice and Beans in El Salvador we call it Cassamiento also in Honduras and Hondurans make it with Coconut Milk in Nicaragua they call it Gallo Pinto. also Cubans make it they call it Moros y Cristianos.

True, I lived in Belize and El Salvador but the main difference was in Belize we ate it all the time but in El Salvador not that much. I miss the corn tortillas in El Salvador and how thick they were compared to other places.

lol Sophia...it really works. Now all my white friends are cooking rice and beans and some Belizeans too. I'm always mad when I get grainy rice that's not soaked at parties. Everyone always ask Joe to make rice and beans when they invite us to potlucks. :)

@TheBelizeborn, I redid tamales for the show and tried to wrap one in the leaf. I was pleasantly surprised at how good it came out. I'll put that one up soon. You made me laugh, because mom says the same thing about not wanting dad to make a mess and baby bro (age 28) is left handed, so she says he is messy too. So glad all my kids are very capable and Joe made sure of that. He started cooking when he was 16 because he hated his sister's cooking after the mom had her do all the cooking.

I have 8 brothers and all can cook real nice .They grew up working lobster traps / Belizean caye man with my uncle so when they are out weeks at a time at the cayes they have to do there own cooking .

Thanks for this recipe. Just got back from a trip to Belize with my family and they wanted rice and beans for a special dinner so I researched many recipes and settled on this one. I followed the instructions exactly and the one critique I had after making this is that 2 tablespoons of black pepper is WAY too much. It made the dish nearly inedible. And I love black pepper and put it on nearly everything I eat. I also like spicy food. I would suggest 1 tablespoon or maybe even less.

Hi Michael, everyone's taste buds are different. I always suggest you go with your taste. My recipes are a guide and not gospel. We like it spicy like this and usually cook it this way because the people we offer food to like it spicy like this.

Yes, I love black pepper too but thought I would wait until close to the end to add the 2nd tablespoon. I am always trying new brands of whole black peppercorns, some have a lot more heat and some are pretty mild, even though they are all called the same name.

We've been to Belize 3 times over the past few years, my husband loves to scuba dive and he lived there for awhile in the 70's. I made Belizean Rice and Beans awhile back and messed them up, trying to 'tweak' it here and there. They were good but very creamy and not the texture we wanted. My beans are boiling as we speak to your recipe, can't wait to see how they turn out! Enjoying your videos~

It use to drive me crazy too, now I just give her a look, she starts laughing and make his plate. Her excuse is she does not want him to make a mess in the kitchen, LOL. Split beans is my favorite too, especially w/dumplings over rice. It was the first Belizean dish I gave my daughter and she loves it to this day. Every time I say I am making it, she wants to know if I am putting dumplings in it. I am getting ready to eat a tamale. I wrap mine in banana leaves, delicious!

how do you feel about pre-cooking the rice? not too much but to avoid the sticking for us who dont have thick pots.. then mix it together and then let it simmer? what do you think?

HI Fitange, Yes Joe can really cook great! He's been cooking since the age of 16. The way he tells it, "His mom had 11 of them and she put the task of cooking to his sister one year younger that he." Well he hated her food so he started to do the cooking instead. Pretty soon he cooked for that whole big family everyday. To this day his sister still can't cook to match him. lol

The only time I ever heard of soaking beans was when I moved to America. My grand aunt use to have us help her pick mud clumps and stones out of the beans in Belize the night before then she washed them and cooked them the next day. I've even found mud clumps in the beans here, but not the little stones.

I'm just playing "what if" here but what if you have hands like Shaquille O'Neal or just huge hands in general? The water level would be completely different. I would think that water measurement method wouldn't apply.

I followed your steps precisely. One pound beans, six cups rice, one can coconut milk, two and a half cups bean stock. It’s sticky and not loose like how yours is in the video.

Jamaica rice & pease is done the same way you took the longer way of doing it thou & took out few ingredients out & add a different ones

Was thinking the same .I have been using the finger measurement for years but lately I find some rice that are coming out comes out too soft with that I had to adjust to half that finger measurement.So it seems some if the rice are harder than some .I was puzzled ! Why I did that that I always do and it comes out soft , so I guess some rice would take longer some a shorter time .
