Winter brings many gifts to Bengal, and notun aloo (new potato) is one of the most cherished. They are all over the bazars, covered in soil and sand, their skins flaking off-not an objectively pleasing sight-but to the starch-obsessed Bengali this is the pinnacle of potatoes. This new potato, along with the sweet winter peas that have arrived from Ranchi, makes for the most scrumptious alu'r dum.

Absolutely delicious. This is how my mom makes her aloo-dum here in Nepal. She has her roots from the eastern part of the country and the way Bengali food are made are reflected in the way we make ours.

আপনাদের সব রান্না ই খুব মন দিয়ে দেখি।আমার মনে হয় boiled আলু গুলো একটু ভেজে নিলে বেশি টেস্টি হয়।আর করাইসুটি ও হালকা fry হলে কাঁচা গন্ধ টা কেটে যায়।

@@bijoybiswas1932 We don't claim the whole west Bengal as kolkata. But there is no specific claim for different foods from West Bengali like ours. Do you guys say maldar alur dom? Or murshidabader chuntney? I haven't heard like any of this so far.In fact I have heard from other Indians calling it Kolkata food.It is very ridiculous that you addressed a very trivial matter🙂

@@bijoybiswas1932 Don't hyperventilate. She is probably referring to 'Calcutta cuisine' that involves the foods available on Deckers Lane, Calcutta Chinese, unique foods like 'dim-er-devil' etc that originated from this city.

It's easier to grind small amount of whole 'Gorom Moshla' in a 'Shil-Nora' than in a grinder

Nowadays we dont get the person to sharpen shil-nora or silbatta, so we are unable to use it..

@@peachNplum Where I stay, there is a 'shil-kata' wallah who goes by every other week. I think you can take it to a small stone works shop or something where they might do this for you.

How about using a pressure cooker for boiling the potatoes. Will take 15 to 20 minutes as opposed to 40 minutes and above all, saves fuel. Glad to see you back.

I always look forward to your recipes. However I noticed something in this video that I wish you had mentioned or taken care of. Many of the potatoes had a greenish tinge on them. This indicates the presence of an alkaloid called solanine - a bitter toxin, which when imbibed in sufficient quantities can be toxic. These parts should be removed before cooking. The rest of the potato is edible. Please include tips like these with your recipes. Food safety first. 😊

Ekdom thik bolechen. When these greenish potatoes goes n larger amt n stomach it may cause food poisoning. So better to avoid or cut down d greenish part and them used n cooking. However, amazing vdo alwezz

I made it with what is known as "Drilling Festkochend Kartofeln" here with low intensity Indo-European spices. Was not sure while cooking but the outcome was amazing and the flavour was just what I was reminiscing. Kudos to your robust measurements, which I think is the key. None of them has ever failed in bringing out the taste that I expect! Thanks a ton!!

Bong eats has very good recipies . Better than most youtubers . But since they make it in English and have a bit complex presentation for begginers their subscribers aren't as much as Bharatzkitchen or kabita's

Love the use of sil nora. You are so beautifully traditional. Would however like to know your thoughts on boiling the potatoes for 40 min vs 10 min on pressure cooker. I have this conflict wherein I am aware about carbon footprinting and going energy efficient ways and then know that the taste of food is somehow better when cooking is done with more time in traditional ways. Would like to know your thoughts.

Why are you not using a pressure cooker to boil potatoes? Is it to preserve tradition or potatoes may be too mushy? Also saving fossil fuel for me is a very imp message to all thru digital media.

Onions should not be covered and cooked it will start losing water amd will not fry well,in that case raw onion smell will persist.

I blend everything at once. Tomato, onions and chillies at once. Does it affect the final taste a lot. I don't see much difference but it definitely takes less time to reach that jam consistency with oil oozing out of that mixture??

It's not an usual Bengali alur dom. Normally there is no onion or garlic. A little bit of ginger paste and only turmeric and a hint of cumin powder, if you must, better avoided. Light red chili powder(kashmiri) and tomatoes and whole green chilli. That's it. No gorom masala needed here, maybe a touch of hing. This video is a Punjabi style of cooking with too many spices and things!

I have tried cooking with mustard oil: as soon as it gets hot I start crying and I have to stop it (my nose bleeds too due to irritation, and my wife the same). What s the secret?! How can we avoid that? Us that normal?! Why bengali people don't cry when using it?!
