Since the dal is being cooked to 80% doneness by boiling in the first stage, adding some flavour elements (such as the onion, one could also add bay leaves, green chillies) in the boiling water makes the dal a little more fragrant all the way through.

I tried this receipe….I am not a fan of ghee and mustard oil and I always use coconut oil…..but since I was missing Bengali food so I tried and followed the same as shown but it turned out….Yak…Food shown in blog can’t be rated unless and until it’s tried and tasted on your own. Non of my people at home or friends liked it

As much as I admire the production quality of your recipes, I cannot understand why you all make it so complex. Bengali cuisine does not need the accuracy of baking and teaspoon/tablespoon measurements should work fine. Even French/Italian/Chinese/American/Middle Eastern cooking recipes do not measure spices, liquids, salt, and sugar in weight. While I appreciated the quest for accuracy, accuracy for accuracy’s sake can be a distraction. Which kitchen in Bengal do you think measures lipids, spices, salt, sugar, etc in weight. Besides this recipe of Ghughni has so much sugar that it throws the entire balance off. An hour of cooking gone to waste.

যখনই ঘুগনি বানাতে যাই , মটর কিছুতেই ভালো সেদ্ধ করতে পারিনা (*গ্যাস বাঁচাতে প্রেসার কুকার use করি) । শক্ত থেকে যায় রান্না করার পরও । এটা কাবলি ছোলার ক্ষেত্রেও হয় । কি করলে ভালোভাবে সেদ্ধ হবে অথচ গলে যাবেনা একটু বলে দিন প্লিজ । মটর বা ছোলা বেশিক্ষণ ভিজিয়ে রাখলে (say 24hrs) কি এরম সমস্যা বেশি হয় ? এখানে আরেকটা জিনিসও বলি , কিছুদিন আগে ঘুগনি বানাতে যাই । তো মটর গুলো 12hrs (সকাল to বিকাল) ভেজানো ছিল , কিন্তু সেদিন কোনো কারণবসত করতে না পারায় জল পাল্টে ফ্রিজে তুলে রাখি , পরদিন বিকেলে যখন সেদ্ধ করতে যাই , প্রেসার কুকারে প্রায় 10টা whistle দেওয়ার পরেও নরম হয়নি । মটর গুলো split হয়ে গেল বটে কিন্ত নরম হলো না কিছুতেই । এর একটা বিহিত চাই 😢😢😢😢
